Quick And Easy Monkey Bread
1/2 cup butter
1/2 cup chopped walnuts
1 cup brown sugar
2 Tbs. water
3 Tbs. cinnamon
2 (10 oz) cans biscuits

Preheat oven to 375.  Sprinkle 3 Tbs. of chopped nuts in bottom of
well-greased Bundt or angel food cake pan.  In a saucepan melt
butter, add remaining nuts, brown sugar and water; heat to a boil
stirring constantly.  Put a layer of biscuits (that have been
quartered); sprinkle some of the mixture over the cut biscuits,
sprinkle with a little cinnamon, keep layering until all ingredients
are used.  Bake 20 to 25 minutes.

Best-Ever Potatoes

   7 cups coarsely chopped small red potatoes
   1 cup chopped onion
   1 8-ounce carton dairy sour cream
   1 cup (4 oz.) shredded Monterey Jack cheese
   1 cup (4 oz.) shredded sharp cheddar cheese
   1/2 teaspoon salt
   1/4 to 1/2 teaspoon ground red pepper
   2 medium tomatoes, seeded and chopped

 In a large saucepan cook potatoes and chopped onion, covered,
 in a small amount of boiling water for 12 to 15 minutes or until
 tender; drain. Stir in sour cream, Monterey Jack cheese, cheddar
 cheese, salt, and red pepper. Stir in chopped tomatoes. Spoon into
 a 2-quart rectangular baking dish. Bake, uncovered, in a 350F oven
 about 30 minutes or until heated through.

Spiced Pumpkin Pie

2/3 cup (packed) golden brown sugar
1/2 cup sugar
2 tablespoons all purpose flour
1/2 teaspoon salt
1/2 teaspoon ground cinnamon
1/8 teaspoon ground allspice
1/8 teaspoon ground cloves
1/8 teaspoon ground ginger
1 1/2 cups canned solid pack pumpkin
2 tablespoons mild-flavored (light) molasses
3 large eggs
1 cup whipping cream
1 purchased frozen 9-inch pie crust

 Place baking sheet in oven and preheat to 450F. Whisk first 8
 ingredients together in large bowl to blend. Whisk in pumpkin,
 molasses and eggs, then cream. Pour mixture into frozen crust.
 Place pie on preheated baking sheet in oven. Bake 10 minutes.
 Reduce heat to 325F and bake until sides puff and center is just
 set, about 40 minutes. Cool. (Can be made 1 day ahead. Cover and
 refrigerate.) Serve at room temperature.

Beef Gyros

1 slow-cooker liner (we used Reynolds)
2 lb boneless beef chuck steak, about 11⁄4 in. thick
1⁄4 cup olive oil
2 Tbsp lemon juice
1 Tbsp minced garlic
1 tsp dried oregano
1⁄2 tsp salt
1⁄4 tsp pepper

Yogurt-Dill Sauce
1 cup Greek yogurt
1 cup diced seedless cucumber
1 Tbsp snipped fresh dill
1⁄4 tsp salt
5 pocketless pita breads

Accompaniments: leaf lettuce, sliced tomatoes and red onions

1. Line a 3-qt or larger slow-cooker with liner; place beef in liner.

2. Mix oil, lemon juice, garlic, oregano, salt and pepper in small bowl. Pour over beef, turning to coat.
Cover and cook on low 6 to 8 hours until meat is tender. 

3. Meanwhile, make Sauce: Stir ingredients, cover and refrigerate.

4. Remove beef to cutting board; slice. Return beef to juices in slow-cooker to keep warm. Warm pitas as
package directs; top with sliced meat. Serve with accompaniments and yogurt sauce.

Brownie Fudge

4 (1 oz.) squares unsweetned chocolate, chopped
1 cup butter
3/4 cup sugar
1 cup brown sugar
4 eggs
1 cup flour
1/2 tsp. baking powder
1 cup chopped walnuts or pecans
2 tsp. vanilla
3/4 cup butter
1-2/3 cups light cream
2 cups sugar
2 cups brown sugar
7 oz. jar marshmallow creme
12 oz. pkg. semisweet chocolate chips
12 oz. pkg. special dark chocolate chips
2 tsp. vanilla

Preheat oven to 350 degrees. Spray a 13x9" pan with nonstick baking spray containing flour and set aside.
Melt 4 oz. chocolate and 1 cup butter in heavy saucepan over low heat, stirring until smooth. Beat in 3/4 cup
sugar and 1 cup brown sugar, then add eggs and beat until smooth. 
Add flour, 1 cup walnuts and 2 tsp. vanilla to chocolate mixture and stir just until combined. Spread
brownie batter into prepared pan and bake at 350 degrees for 20-30 minutes until just set. Don´t
overbake! Start making Fudge Topping as soon as the brownies go into the oven. 

For Fudge Topping, melt 3/4 cup butter and light cream in large saucepan over medium heat. Add 2 cups sugar
and 2 cups brown sugar and stir well; bring to a boil over medium heat, stirring constantly. Boil for 5

Bold and Sassy Beef Salad 

1 lb. beef top sirloin steak, cut 1-inch thick 
1 large head red leaf lettuce 
4 ounces peppered or regular Feta cheese 
1/2 cup pecan pieces 
1 cup sour cream 
1/4-1/2 cup prepared horseradish 
1/2 cup sugar 
2 Tbsp. red wine vinegar 
salt and pepper to taste 

Season steak as desired. Grill over medium coals 15-18 minutes for medium-rare (140°F) to medium
(160°F), turning once. Let stand 5 minutes before carving.

Meanwhile, wash and dry lettuce. Tear into bite size pieces and place on a large platter. Crumble Feta
cheese over lettuce.

With a wire whisk, combine sour cream, horseradish, sugar, vinegar, salt and pepper.

Holding the knife at an angle, carve steak across the grain into thin slices.

Arrange steak slices on top of lettuce. Drizzle dressing over entire platter and sprinkle with pecans.

Suggestions
You may use low fat or nonfat sour cream in the dressing if desired. Tomatoes make a nice garnish for this salad.

Creamy Havarti Chicken

4 boneless, skinless chicken breasts
10 oz. can condensed cream of chicken soup
1/4 cup whole milk
1/2 cup purchased dry bread crumbs
2 Tbsp. butter, melted
1/2 cup shredded Havarti cheese

Preheat oven to 375 degrees. Place chicken in a greased 12x8" glass baking dish. In a small bowl, combine
soup and half and half. Mix well with wire whisk and pour over chicken. Bake at 375 degrees for 30 minutes. 
Meanwhile, combine bread crumbs with melted butter in small bowl. Remove chicken from oven, sprinkle with
cheese, and sprinkle crumb mixture over the cheese. Return to oven and bake 10 minutes longer, or until
chicken is thoroughly cooked.

3 ripe mangos, peeled, pitted and coarsely chopped 
3/4 cup confectioners’ sugar, divided 
1 Tbs. lime juice 
1 Tbs. orange juice 
1 cup heavy cream 

1. Place mango, 2 tablespoons sugar, lime and orange juice into bowl of a food processor and blend until
smooth. 
2. Scrape mixture into a large mixing bowl and chill completely. 
3. Whip cream with remaining sugar until stiff peaks form. 
4. Fold whipped cream into mango mixture and spoon into small dessert cups. Serve immediately.

3 tablespoons olive oil 
2 tablespoons cane vinegar 
2 tablespoons lime juice 
1 teaspoon freshly chopped chives 
1 teaspoon freshly chopped parsley leaves 
1 tablespoon freshly chopped cilantro leaves 
1 jalapeno pepper, stem and seeds removed and minced 
3/4 teaspoon salt 
1/4 teaspoon fresh ground black pepper 
1 (14-ounce) can hearts of palm, drained 
1 small red onion, thinly sliced 
1 cup cooked black beans 
1 cup cooked corn 
1/2 cup thinly sliced yellow bell pepper 
1/4 cup sliced bias cut green onions 
Mixed greens, if desired, for serving 

In a small bowl, combine the olive oil, vinegar, lime juice, herbs, jalapeno, salt and pepper. Set aside. 

Slice the hearts of palm on an angle, about 1/2-inch thick. Combine the hearts of palm, red onions, black
beans, corn, bell pepper, and green onions in a mixing bowl and toss to combine. Arrange on a platter or
individual salad plates, over greens, if desired, and drizzle with the dressing. 

Yield: 4 servings

Famous Recipes - Sour Dough Breakfast Bake


Sour Dough Breakfast Bake presented by Amid Summer's Inn Bed and Breakfast 

8 slices sour dough bread
1/2 lb. grated sharp cheese
1 cup milk
7 eggs(well beaten)
3/4 teaspoon dry mustard
3/4 teaspoon salt
1 1/2 lbs ham (cubed)
mushrooms(optional)
chopped red or bell pepper(optional)

Spray a 9x13 inch baking dish with a non-stick coating. Alternate layers of bread, cheese, and ham. Add
mushrooms and bell pepper if desired. Mix the eggs, milk, and seasonings, pour evenly over layers. Cover
and refrigerate overnight. Uncover in the morning before baking. Bake at 350 degrees. Garnish side with
fresh parsley. The red or green pepper makes for a pretty topping.

Prep Time: 1/2 hour
Cook Time: 1 hour
Yield: 8-10
