Famous Recipes - Cucumber Ranch Steaks


Cucumber Ranch Steaks

4 beef shoulder center steaks (Ranch Steak), cut 3/4 inch thick (about 5 oz. each) 
1/2 cup finely chopped, seeded cucumber 
1/4 cup prepared ranch dressing 
1 Tbsp. garlic-pepper seasoning 
1 small tomato, seeded, diced (optional) 

Combine cucumber and dressing in small bowl. Set aside.

Press garlic-pepper seasoning evenly onto beef steaks. Place steaks on grid over medium, ash-covered
coals. Grill, covered 9 to 11 minutes for medium rare to medium doneness, turning once.

Serve steaks with cucumber sauce. Garnish with tomato, if desired.

Suggestions
To easily seed a cucumber, cut it lengthwise in half and use the tip of a teaspoon to scrape out the seeds.

Dried cranberries and cinnamon transform this reverse chocolate chip cookie into a holiday favorite. The

1/2 cup (125 ml) Dutch process cocoa powder
1 teaspoon (5 ml) ground cinnamon

 Hungary - Szekelygulyas

 4-1/2 cups pork, cut into 1-inch cubes

 3 tbsp. lard

 2 cups onion, sliced

 1 tbsp. Hungarian red paprika

 2 tbsp. water

 1 tsp. salt

 2 tsp. caraway seeds

 1 clove garlic, crushed

 3-1/2 cups sauerkraut

 1/2 cup sour cream

 1 tbsp. flour

 Roast the onion in heated shortening until of yellow color; 
remove from heat. Stir in the paprika, add water, put back onto 
heat. Add meat, salt, caraway seeds and garlic; cook gently for 
approximately 1/2 hour, stirring occasionally. Add the sauerkraut 
and cook until well done. Stir the flour into the sour cream, add 
to dish, and let simmer on very low heat for about 10 minutes.

Cherry Hearts 

Dough:
1 cup unsalted butter, room temperature
1 cup granulated sugar
2 large eggs
2 teaspoons pure vanilla extract
3 cups all-purpose flour, plus additional for work surface
1 teaspoon baking powder
1 teaspoon salt

Filling:
12 red maraschino cherries, finely chopped
1/4 cup red maraschino cherry juice
1/2 cup freshly squeezed orange juice
1/2 cup granulated sugar
4 1/2 teaspoons cornstarch
1 tablespoon unsalted butter

Dough:
In a large bowl, combine butter and sugar; cream together until mixture appears light and fluffy. Add eggs
and vanilla; beat until thoroughly mixed. Add flour, baking powder and salt; stir to mix.

Press dough into a ball, cover and refrigerate until well chilled, at least 2 hours.

Filling: 
In a small heavy saucepan over medium heat, combine cherries, cherry juice, orange juice, sugar,
cornstarch, and butter; bring to a boil, stirring constantly so the mixture does not burn. Boil and stir
for one minute. Remove from heat. Cool, and then refrigerate to chill.

Beef & Zucchini Mediterranean

1 lb. top sirloin steak, 1/2 to 3/4-inch thick
2 cloves garlic
1 1/2 tsp. Greek seasoning
1/2 tsp. black pepper
1 Tbsp. olive oil, divided
4 medium zucchini
1 large tomato, diced
8 large black olives
1 tsp. thyme leaves
1 tsp. oregano leaves
1/4 cup fresh feta cheese, finely crumbled or Parmesan cheese, grated

Crush 1 clove garlic and mix with Greek seasoning and pepper. Press mixture into both sides of steak and cook
in 1/2 Tbsp. olive oil over medium heat for 3-5 minutes per side. Remove steak and cut into 1/2-inch cubes.

Slice zucchini in half lengthwise and microwave cut side down in 1/4 inch water for 2 minutes. Use a melon
baller or spoon to scoop pulp from centers. Chop pulp, tomato and olives.

Stir together 1 clove chopped garlic, thyme, oregano, finely crumbed cheese and beef cubes.

Place zucchini halves in a baking dish. Brush insides with remaining olive oil. Fill with beef and
vegetable mixture. Bake in a preheated 350°F oven for 8-10 minutes.

 Leg of Lamb

 1 Leg of Lamb

 Salt, Pepper

 1 cup Cream

 2-3 tablespoons Flour

 Put the Leg of Lamb on a grid in a roasting pan and pour one quart

 of water into the pan. Place into oven, then heat oven to 300F.

 Roast for one hour for each 2 lbs. of weight. Pour the stock from

 the pan over the Leg of Lamb occasionally with a spoon. For the last

 half hour of cooking switch on the grill, and grill the Leg of Lamb

 on both sides.

 Sieve the stock into a casserole and skim off the fat. Thicken the

 sauce with flour, season, and color with gravy browning. Stir in the

 cream and remove from the heat.

Crockpot Vegetable Clam Chowder

2 6 1/2 oz cans minced clams
2 c. peeled potatoes, cut into 1/2" cubes
1 c. finely chopped onion
1 c. chopped celery
1 tsp. sugar
1/4 tsp. salt
1/4 tsp. pepper
2 10 3/4 oz cans condensed cream of potato soup
2 c. water
1 c. nonfat dry milk powder
1/3 c. flour
1 c. cold water
4 slices bacon, crisp-cooked, drained, and crumbled
Paprika

Drain clams, reserving liquid. Cover clams; chill. In CP combine reserved clam liquid, potatoes, onion,
celery, carrot, sugar, salt, and papper. Stir in potato sour and 2 cups water. Cover; cook on low heat for 8
to 10 hours or on high heat for 4 to 5 hours. If using low heat setting, turn to high. In a medium bowl combine
nonfat dry milk powder and flour. Gradually whisk in 1 c. cold water; stir into soup. Cover; cook on high 10
to 15 minutes or till thickened. Stir in clams. Cover; cook 5 minutes more. Ladle soup into bowls. Sprinkle
each serving with crumbled bacon and paprika. 

Makes 6 to 8 servings.

Chicken Noodle Casserole

2/3 cup chopped onion 
1 garlic clove, minced 
1 tablespoon olive oil or canola oil 
1 1/2 pounds boneless skinless chicken breasts, cut into 3/4-inch cubes 
1 can (14 1/2 ounces) chicken broth 
1 1/2 cups chopped carrots 
3 celery ribs, chopped 
1/2 teaspoon dried savory 
3 tablespoons butter or stick margarine 
3 tablespoons all-purpose flour 
3/4 teaspoon salt 
1/8 teaspoon white pepper 
1 1/2 cups 2 percent milk 
1 1/4 cups shredded reduced-fat cheddar cheese 
8 ounces wide egg noodles, cooked and drained 

In a large nonstick skillet, saute onion and garlic in oil until tender. Add chicken; cook and stir until no
longer pink. Add the broth, carrots, celery and savory. Bring to a boil. Reduce heat; cover and simmer for
10-15 minutes or until vegetables are tender.

Meanwhile, in a saucepan, melt butter. Stir in the flour, salt and pepper until smooth. Gradually add milk.
Bring to a boil; cook and stir for 2 minutes or until thickened. Remove from the heat; stir in cheese until
melted. Pour over chicken mixture. Add noodles; mix well.

Transfer to a 3-qt. baking dish coated with nonstick cooking spray. Bake, uncovered, at 350 degrees F for
15-20 minutes or until bubbly.

Famous Recipes - Berry Cobbler


Berry Cobbler  
A taste of the Northwest at Disney World

3 cups all-purpose flour
1/4 tbsp. salt
2 1/2 tbsp. baking powder
1 1/8 cups granulated sugar
1/2 cup unsalted butter
2 eggs
1 cup heavy cream
2 cups blueberries or other seasonal berries
8 tbsp. brown sugar
8 tbsp. unsalted butter
Whipped cream or ice cream

Combine the flour, salt, baking powder and sugar. Break the butter apart into small pieces and mix it in. Add
the eggs and stir until just absorbed. Add the heavy cream and mix just enough to incorporate (batter
should be lumpy). Divide the dough into four pieces.

In four 6-inch cake pans lined with parchment paper, place the pieces of dough, spread evenly along bottom
of the pans. Spread the blueberries on top of each piece. Sprinkle each with 2 tablespoons brown sugar. Dot
each with 1 tablespoon butter.

Bake in a preheated 350 degree oven for 15 minutes, or until an inserted toothpick comes out clean and dry and
the cobblers are lightly browned. Cool to room temperature, add fresh berries (if desired) and serve with
a dollop of chilled whipped cream or vanilla ice cream.
