Famous Recipes - Spaghetti w/Clams, Tuna, Bacon, 04-02-09


Spaghetti with Clams, Tuna, and Bacon

1/3 pound bacon, chopped
5 cloves garlic, minced
1 pound dried spaghetti
1/2 cup chicken broth
1 can (6 1/2 oz.) chopped clams
1 can (2 1/4 oz.) sliced black olives, drained
1 can (6 oz.) water-packed albacore tuna, drained and flaked
Lemon wedges
Minced parsley

1. In a covered pan over high heat, begin heating enough water to cook 
spaghetti. Meanwhile, cook bacon in a 10- to 12-inch frying pan over 
medium-high heat, stirring often. Add garlic after 5 minutes; cook until 
bacon has browned, 8 to 10 minutes. Drain all but 2 tablespoons of fat 
from the pan.

2. When water is boiling, add spaghetti; cook, uncovered, until tender 
to bite, about 10 minutes. Meanwhile, to pan with bacon, add broth, 
clams with their juice, and olives. Bring bacon mixture to a boil over 
high heat; cover and keep warm.

3. Drain pasta well; toss with bacon mixture and tuna. Arrange on a 
serving platter or individual plates. Garnish with lemon and parsley. 
Yield:  Makes 4 servings.

Famous Recipes - Cinnamon Cookies, 03-24-09


Cinnamon Cookies

6 tablespoons granulated sugar
1/3 cup butter, softened
2 tablespoons light brown sugar
2 teaspoons vanilla extract
2 large egg whites
1 1/2 cups all-purpose flour (6 3/4 ounces)
1/4 cup cornstarch
1/2 teaspoon baking powder
1/4 teaspoon baking soda
1/4 teaspoon salt
1/4 teaspoon ground cinnamon
2/3 cup powdered sugar
2 teaspoons fat-free milk
1/8 teaspoon ground cinnamon
2 tablespoons sliced almonds

Preheat oven to 375F. Place first 4 ingredients in a large bowl; beat 
with a mixer at medium speed until well blended (about 5 minutes). Add 
egg whites, 1 at a time, beating well after each addition.

Lightly spoon flour into dry measuring cups; level with a knife. Combine 
the flour and next 5 ingredients (flour through 1/4 teaspoon cinnamon), 
stirring well with a whisk. Add to butter mixture; beat well. Divide 
dough into 4 equal portions. Roll each portion to a 1/8-inch thickness 
between 2 sheets of plastic wrap. Freeze dough 20 minutes or until 
plastic wrap can be easily removed.

Famous Recipes - Gingered Ambrosia, 04-02-09


Gingered Ambrosia

6 large navel oranges
2 (20-ounce) cans pineapple chunks, drained
2/3 cup sweetened flaked coconut
1/4 cup fresh mint leaves, cut into strips
2 1/2 tablespoons fresh lime juice
1 1/2 tablespoons grated fresh ginger
Garnish: fresh mint sprig

Peel and section oranges over a bowl, reserving juice. Combine orange 
sections, juice, and remaining ingredients; gently toss. Cover and chill 
until ready to serve. Garnish, if desired. Yield:  Makes 6 to 8 
servings.

Meatball Shepherds Pie

1 1/2 pounds ground lean beef
1/2 cup finely chopped parsley
2 tablespoons Dijon mustard
2 tablespoons all-purpose flour
1 large egg
About 1/2 teaspoon salt
About 1/4 teaspoon pepper
About 1/2 cup fat-skimmed beef broth
Brown onion gravy (recipe follows)
1/2 cup dry sherry, dry white wine, or more fat-skimmed beef broth
6 cups packed peeled hot cooked potatoes
2 to 3 tablespoons butter
1/2 cup cream cheese, at room temperature
1/2 cup shredded Swiss or Parmesan cheese (about 2 1/2 oz.)

1. In a bowl, combine ground beef, parsley, mustard, flour, egg, 1/2 
teaspoon salt, 1/4 teaspoon pepper, and 1/2 cup beef broth. Blend well 
with a fork.

2. In a 4- to 5-quart pan over high heat, bring brown onion gravy to a 
boil; add sherry and reduce heat to maintain a gentle simmer. Quickly 
shape beef mixture into 1-inch balls and drop into gravy. When all are 
in, cover and simmer until meatballs are no longer pink in the center 
(cut to test), 10 to 12 minutes. With a slotted spoon, transfer 
meatballs (some of the onions will come too) to a bowl.

Famous Recipes - Stir fry sesame vegetables over rice

Ignore the wine advertisement in the middle of this recipe. I can't figure
out how to delete it so I have to include it!!! Recipe does not call for
wine...

Stir fry sesame vegetables over rice

INGREDIENTS (Nutrition)
1 1/2 cups vegetable broth
3/4 cup uncooked long-grain white rice
1 tablespoon margarine
1 tablespoon sesame seeds
2 tablespoons peanut oil
1/2 pound fresh asparagus, trimmed and cut into 1 inch pieces
1 large red bell pepper, cut into 1 inch pieces
1 large yellow onion, sliced
2 cups sliced mushrooms
2 teaspoons minced fresh ginger root
1 teaspoon minced garlic
3 tablespoons soy sauce (low sodium)
1 tablespoon sesame oil

 Sauvignon Blanc 
 Beachcomber 

DIRECTIONS
Preheat oven to 350 degrees F (175 degrees C). In a saucepan combine broth,
rice and margarine. Cover and bring to a boil over high heat. Reduce heat to
low and simmer for 15 minutes, or until all liquid is absorbed. 
Place sesame seeds on a small baking sheet and bake in preheated oven for 5 to 6 minutes, or until golden

Blue Ribbon Praline Candy

1 4-serving-size package cook-and-serve butterscotch pudding mix
1 cup granulated sugar
1/2 cup packed brown sugar
1/2 cup evaporated milk
1 tablespoon butter
1-1/2 cups toasted pecan halves

Line cookie sheet with waxed paper; set aside.
In 2-quart saucepan, combine pudding mix, granulated sugar, brown sugar,
evaporated milk, and butter. Cook and stir over medium heat until mixture boils
(about 12 minutes). Clip a candy thermometer to side of pan. Reduce heat to
medium-low; continue boiling at a moderate, steady rate, stirring frequently,
until thermometer registers 234 degrees F, soft-ball stage (8 to 10 minutes).
Remove saucepan from heat. Remove candy thermometer.
Stir in pecans. Beat with a wooden spoon until candy just begins to thicken but
is still glossy (about 3 minutes). Working quickly, drop by teaspoonfuls onto
prepared cookie sheet. (If candy sets up too much, add a few drops of hot water
and stir until smooth again.) Let stand until firm.
Makes about 30 pieces.
