Cashew Salad

1/3 cup (80 ml) sugar
1/3 cup (80 ml) vinegar
1 tsp (5 ml) dry mustard
1 clove garlic, finely chopped
1 tsp (5 ml) celery seed
Salt and freshly ground black pepper to taste
Equal parts fresh raw spinach and leaf lettuce, enough to serve 6 to 8
1/2 cup (125 ml) whole or coarsely chopped 
cashews, or more to taste

Combine the sugar, vinegar, mustard, garlic, celery seed, salt, and pepper in a bowl and whisk until
combined. Toss the greens in the dressing and place on individual serving plates. Sprinkle with the
cashews and serve immediately. Serves 6 to 8.

      AU GRATIN CABBAGE   

      1 lg. head cabbage
      1/2 stick butter
      2 rounded tbsp. flour
      2 c. milk
      Salt and pepper to taste
      3/4 lb. grated cheddar cheese
      Buttered bread crumbs

      Shred cabbage and cook in small amount of water with 1 teaspoon salt. Cook until wilted. Make white sauce
using butter, flour, milk, 1/2 teaspoon salt, pinch of pepper and a dash of onion salt. After sauce is
smooth and thickened, stir in and melt 1/2 pound of cheese. Put 1/2 of cabbage in a buttered casserole. Put
1/2 of cabbage in a buttered casserole. Pour half the cabbage, then sauce. Top with more cheese and cover
with buttered bread crumbs. Bake 30 minutes at 350 degrees.

Famous Recipes - PINEAPPLE UPSIDE DOWN CAKE


      PINEAPPLE UPSIDE DOWN CAKE   

      1/4 c. butter
      1/2 c. packed brown sugar
      1 c. cake flour
      1/2 c. sugar
      1 tsp. baking powder
      1/4 tsp. salt
      1/4 c. butter, softened
      1/2 c. milk
      1 egg
      1/2 tsp. vanilla
      1 can pineapple slices in syrup
      maraschino cherries (as many as pineapple slices used)

      Use an 8" square or round pan. Drain can of pineapple, saving the syrup. 
      Place butter in 8" pan, melt in the oven while preheating to 375°F. 

      Sprinkle brown sugar over melted butter. Arrange whole pineapple slices and cherries (with cherries in
centers of pineapple slices) over the brown sugar in pan. Cut some of the remaining pineapple slices into
half circles, then line the sides of the pan with them (standing up). 

      In a bowl, combine cake flour, sugar, baking powder, salt, softened butter, milk, egg, vanilla and 2
tablespoons of the pineapple syrup. 

      Pour batter into the pan being careful not to disturb the pineapples and cherries. 

      Bake at 375°F for 30 to 35 minutes or until cake is golden and has pulled away from the edges slightly.

      CHEESEBURGER MACARONI   

      2 lb. ground beef
      1 sm. onion
      Salt and pepper
      1 box macaroni and cheese
      Milk, cheese and butter

      Brown ground beef and onion, salt and pepper; drain fat and set aside. Cook macaroni according to box
directions and mix. Combine macaroni and cheese and ground beef together, stir well, serve with garlic
bread. Tastes great.

      ENGLISH PLUM PUDDING   

      3/4 cup sifted all-purpose flour
      1 teaspoon baking soda
      1 teaspoon salt
      1/2 teaspoon nutmeg
      1 teaspoon cinnamon
      1/4 teaspoon mace
      1/4 pound ground suet
      1 cup plus 2 tablespoons brown sugar, packed
      1/4 cup milk
      1/4 cup cider or apple juice
      2 eggs, well beaten
      1 cup seedless raisins
      1 1/2 cup dried currants
      2 cups mixed cut-up candied fruit
      1/2 cup chopped blanched almonds
      1/4 cup all-purpose flour
      1 cup soft day-old bread crumbs

      Sift together first 6 ingredients. Mix suet, sugar, milk and cider; add eggs. Mix raisins, currants, fruit
and nuts with 1/4 cup flour. Add with crumbs and flour mixture to suet mixture. Mix well. 
      Turn into greased and floured 2 quart pudding mold or 2 1-pound coffee cans. Cover with 2 thicknesses of wax
paper, allowing space for pudding to rise, and tie tightly. 

      Place on rack in a large pot or Dutch oven with a tight fitting lid. Pour in enough boiling water to come half
way up on one side of mold. Cover. 

      Bring water to boil, turn to simmer and steam 2 1/2 hours.

Beets In Orange Sauce

1 pound cooked sliced beets
1-1/2 teaspoons cornstarch
1/2 teaspoon salt
3 tablespoons firmly packed brown sugar
1/2 cup orange juice
1 tablespoon butter 

Thoroughly drain beets.

In saucepan combine cornstarch, salt, and brown sugar. Gradually add 
orange juice. Add butter. Cook, stirring constantly, until thickened 
and clear.

Add beets. Heat thoroughly.

Makes 4 servings

Italian Grilled Cheese Sandwiches

Prep Time: 15 minutes
Cook Time: 5 minutes

8 slices whole wheat bread
1/4 cup prepared pesto
8 thin slices mozzarella cheese
1 tomato, thinly sliced
8 thin slices Provolone cheese
2 eggs, beaten
1/3 cup milk
1/8 tsp. white pepper
1 Tbsp. flour
3 Tbsp. cornmeal
2 Tbsp. grated Parmesan cheese

Preheat dual contact grill, waffle maker, or panini maker. Spread one side of each slice of bread with
pesto. Make sandwiches, enclosing a thin slice of tomato between two slices of cheese, one mozzarella and
one provolone. 
On shallow plate, beat eggs with milk and pepper. On another shallow plate, combine flour, cornmeal, and
Parmesan cheese. Dip sandwiches into egg mixture, then dip into flour mixture. 

Cook for 4 minutes on grill until crisp and golden.

Green Goddess Salad

For the dressing:
1 cup (250 ml) coarsely chopped parsley
1 cup (250 ml) mayonnaise
1 cup (250 ml) sour cream
1/4 cup (60 ml) coarsely chopped fresh chives
1/4 cup (60 ml) white wine vinegar
3 Tbs (45 ml) chopped fresh tarragon
6 anchovy fillets, or 2 Tbs anchovy paste
1 scallion (spring onion), white and green parts, coarsely chopped
1 clove garlic, coarsely chopped

For the salad:
1 clove garlic, peeled
1 head Boston lettuce
1 head romaine
1 small bunch chicory, or green of your choice

Combine all the ingredients for the dressing in an electric blender or food processor and process until
smooth. The sauce should be rather thick, but you may thin it if necessary with a tablespoon or two of milk.
Pour into a glass jar with a tightly fitting lid and refrigerate for at least 3 hour to overnight. Shake well
before using.

Rub the inside of a large wooden salad bowl with the clove of garlic and discard the garlic. Break the greens
into small pieces and place them in the bowl. Drizzle enough of the dressing over the greens to coat them
lightly and toss gently. Serves 6 to 8, with extra dressing left over.

      GOLDEN BAKED MACARONI AND CHEESE   

      ¼ cup butter
      ¼ cup flour
      3 cups milk
      1 cup grated cheddar cheese
      ½ teaspoon salt
      ½ teaspoon dry mustard
      ¼ teaspoon pepper
      1 teaspoon Worcestershire sauce
      ½ package (8 oz.) bite sized macaroni
      1 cup grated sharp cheddar cheese
      bread crumbs

      Melt the butter in a large saucepan. Blend in flour and gradually add the milk, stirring constantly; add the
seasonings. Cook until the sauce is thickened. 
      Add one cup grated cheddar cheese and stir until melted. Cook macaroni as directed, drain, and add to cheese
sauce and mix well. Turn the mixture into an 8-inch square baking dish or pan. Sprinkle the top with 1 cup
sharp cheddar cheese and breadcrumbs. 

      Bake in a 375°F oven for about 15 minutes. Remove from the oven and place under the broiler until the cheese
is bubbly and lightly browned. Serves 6-8.

      SOUR CREAM CHICKEN ENCHILADAS   

      1 chicken
      4 cans Cream of Chicken soup
      1 white onion, chopped
      6 jalapeno pepper slices, chopped
      1 small can mushrooms, drained and chopped
      1 pkg. flour tortillas
      16 oz. sour cream
      1 large package Mexican-style shredded cheese

      Boil chicken in a large pot. While boiling, chop onion, jalapenos, and mushrooms. Sauté in a skillet until
flavors are mixed well. Set onion mixture aside. 
      In a large bowl, combine 3 cans Cream of Chicken soup and the sour cream. Mix well and remove enough of the
mixture to cover the top of the 9'x13" baking pan. Set aside. (You should have a small bowl and a larger bowl
set aside with the chicken soup and sour cream). 

      Once chicken is done, cool and debone chicken into small pieces. Put chicken pieces and onion mixture in
with the large bowl mixture. Mix well. 

      Get your baking pan and tortillas out. Cover the bottom of the baking pan with a thin layer of the small bowl
mixture. Put about 2 large spoonfuls of the large bowl mixture into each tortilla and roll it up and place it
in the pan until full. 

      Cover enchiladas with the mixture from the small bowl. Cover with a thick layer of cheese. 

      Bake at 350°F for 30-40 minutes or until cheese is melted and mixtures are bubbling. 

      Feeds family of 4.
