Spiced Pumpkin Dunking Sticks

Ingredients
1  cup butter, softened 
1/2  cup sugar 
1  teaspoon ground cinnamon 
3/4  teaspoon baking powder 
1/2  teaspoon ground nutmeg 
1/2  teaspoon ground ginger 
1/4  teaspoon salt 
1/4  teaspoon ground cloves 
1/3  cup canned pumpkin 
1  egg 
1  teaspoon vanilla 
2-1/2  cups all-purpose flour 
  Cream Cheese Glaze 
  Freshly grated nutmeg (optional) 

Directions
1. Preheat oven to 400 degrees F. In a large bowl, beat butter with an 
electric mixer on medium to high speed for 30 seconds. Add sugar, 
cinnamon, baking powder, the ground nutmeg, the ginger, salt, and 
cloves. Beat until combined, scraping side of bowl occasionally. Beat in 
pumpkin, egg, and vanilla until combined. Beat in as much of the flour 
as you can with the mixer. Using a wooden spoon, stir in any remaining 
flour. 

2. Place dough in a pastry bag fitted with a large open tip. Pipe dough, 
using a corkscrew motion, onto an ungreased cookie sheet into 
4-inch-long strips.

Three Cheese Pasta Bake

Ingredients
1  (16-ounce) package ziti 
2  (10-ounce) containers refrigerated Alfredo sauce 
1  (8-ounce) container sour cream 
1  (15-ounce) container ricotta cheese 
2  large eggs, lightly beaten 
1/4  cup  grated Parmesan cheese 
1/4  cup  chopped fresh parsley 
1 1/2  cups  mozzarella cheese 

Preparation
Prepare ziti according to package directions; drain and return to pot.

Stir together Alfredo sauce and sour cream; toss with ziti until evenly 
coated. Spoon half of mixture into a lightly greased 13- x 9-inch baking 
dish.

Stir together ricotta cheese and next 3 ingredients; spread evenly over 
pasta mixture in baking dish. Spoon remaining pasta mixture evenly over 
ricotta cheese layer; sprinkle evenly with mozzarella cheese.

Bake at 350F for 30 minutes or until bubbly. Makes 8 servings.

Gingersnaps

2 cups all-purpose flour
1 tablespoon ground ginger
2 teaspoons baking soda
1/2 teaspoon salt
1 cup granulated sugar, divided
7 tablespoons butter, softened
1/4 cup packed dark brown sugar
2 tablespoons honey
1 teaspoon vanilla extract
1 large egg
Cooking spray

Preheat oven to 350F. Lightly spoon flour into dry measuring cups, and 
level with a knife. Combine flour, ginger, baking soda, and salt in a 
small bowl. Place 3/4 cup granulated sugar, butter, and brown sugar in a 
large bowl, and beat with a mixer at medium speed until well-blended. 
Add the honey, vanilla, and egg; beat well. Add the flour mixture, 
beating at low speed until well-blended. Cover dough and freeze for 1 
hour or until firm.

Lightly coat hands with cooking spray; shape the dough into 24 (1-inch) 
balls. Roll the balls in 1/4 cup granulated sugar; place the balls 2 
inches apart on baking sheets. Bake at 350F for 12 minutes or until 
lightly browned. Cool for 2 minutes on pans. Remove cookies from pans, 
and cool on wire racks. Yield:  2 dozen  cookies

Bean and Bacon Soup

Ingredients
4  strips bacon 
1  large carrot, chopped (about ¾ cup) 
2  stalks celery, chopped (about 1 cup) 
1  medium onion, chopped (about 1 cup) 
4  cloves garlic, chopped 
2  15 ½-ounce cans great Northern beans, drained 
2  tablespoons  chopped fresh parsley 
1 1/4  teaspoons  kosher salt 
1/2  teaspoon  freshly ground black pepper 
Preparation

In a large Dutch oven or saucepan, fry the bacon until crisp. Remove and 
drain on paper towels. Let cool, chop, and set aside. Over medium heat, 
add the carrot to the pan drippings in the Dutch oven and sauté for 5 
minutes. Add the celery, onion, and garlic, stirring well and cooking 
for 3 minutes more. Add the beans and 2 cups water. Bring to a boil, 
cover, and reduce heat to low. Let simmer for 10 minutes. Uncover and, 
with a potato masher or large slotted spoon, partially mash the bean 
mixture until it thickens slightly. Stir in the parsley, salt, pepper, 
and bacon. Serve hot. Serves 6.

Cinnamon-Scented Pinecones
Spread pinecones on a foil covered cookie sheet and bake at 250 degrees F for one hour. This will kill any
unwanted 'critters' that may be hiding in the pinecones.
When cool place in a heavy plastic bag and sprinkle well with the Cinnamon Oil Scent which you can buy at
Wal-Mart or a craft shop. Seal tightly and let set for about four weeks.

Can this be made with just a regular old stock pot or crock pot?  I don't
have a dutch oven, nor do I know anything about them (or where to find one).

INGREDIENTS 
  a.. 2/3 cup packed light brown sugar 
  b.. 1/4 cup cinnamon applesauce 
  c.. 1 1/2 teaspoons ground ginger 
  d.. 2 pounds boneless pork loin roast 

DIRECTIONS
  1.. Preheat oven to 325 degrees F (165 degrees C). Lightly flour an oven bag. 
  2.. In a small bowl, blend brown sugar, applesauce, and ginger. 
  3.. Place pork roast in the prepared oven bag. Pour the brown sugar mixture over the roast. Seal bag, and cut
several small slits in the top. 
  4.. Cook the roast 1 hour in the preheated oven, or until the internal temperature has reached 160 degrees F
(70 degrees C).

Ingredients
  a.. 1/3  cup butter, cut up 
  b.. 1/3  cup packed brown sugar 
  c.. 6  very small red cooking apples (1-1/4 to 1-1/2 lb.), halved, stems removed, cored 
  d.. 1-1/3  cups all-purpose flour 
  e.. 2/3  cup granulated sugar 
  f.. 2  tsp. baking powder 
  g.. 1  tsp. ground ginger 
  h.. 1  tsp. ground cinnamon 
  i.. 2/3  cup milk 
  j.. 1/4  cup butter, softened 
  k.. 1  egg 
  l.. 1  tsp. vanilla 
  m..   Vanilla ice cream (optional) 
Directions
1. Preheat oven to 350F. Place 1/3 cup butter in a 9x9x2-inch baking pan. Place in oven 5 minutes or until
butter melts. Sprinkle brown sugar over butter; stir. Arrange 9 apple halves in mixture, cut sides down.
Bake in oven 10 to 15 minutes or until bubbly. 
2. Meanwhile, peel remaining apples. Coarsely shred; set aside. In bowl combine flour, granulated sugar,
baking powder, ginger, and cinnamon. Add shredded apple, milk, 1/4 cup butter, egg, and vanilla. Beat
with electric mixer on low until combined; beat on medium 1 minute. Spoon over apples, spread evenly
(apple may be exposed; some butter may come to surface). 
3. Bake 35 minutes or until wooden toothpick inserted near center comes out clean. Cool in pan on wire rack
for 5 minutes. Loosen edges; invert onto platter. Spoon any topping in pan over top. Cool 20 minutes; serve
with ice cream. Makes 9 servings.

2 cups cold milk 
1/4 tsp.  peppermint extract 
1 pkg. (4-serving size) JELL-O Chocolate Flavor Instant Pudding & Pie Filling 
6 drops  green food coloring 
1 cup thawed COOL WHIP Whipped Topping 
POUR milk and peppermint extract into medium bowl. Add dry pudding mix. Beat with wire whisk 2 min. or until
well blended; set aside. 

ADD food coloring to whipped topping; stir gently until well blended. Layer pudding and whipped topping
alternately in 6 parfait glasses. 

REFRIGERATE at least 15 min. before serving.

Sweet Orange Salmon

2 tablespoons brown sugar
1 teaspoon chili powder
1/2 teaspoon grated orange rind
1/2 teaspoon ground cumin
1/2 teaspoon paprika
1/4 teaspoon salt
1/4 teaspoon ground coriander
1/8 teaspoon black pepper
4 (6-ounce) salmon fillets
Cooking spray

Preheat broiler.

Combine first 8 ingredients in a small bowl. Rub spice mixture over both 
sides of salmon fillets. Place salmon on a broiler pan coated with 
cooking spray. Broil for 8 minutes or until salmon flakes easily when 
tested with a fork. Yield:  4 servings.
