Pineapple Cheesecake Squares

1 1/4 cups all purpose flour
1/3 cup granulated sugar
1/4 teaspoon salt
8 tablespoons unsalted butter
1 tablespoon orange zest
8 oz softened cream cheese
1/4 cup granulated sugar
1 large egg
1 tablespoon fresh lemon juice
1/4 teaspoon vanilla extract
1/2 cup chopped, candied pineapple or dried sugared pineapple

Preheat oven to 350 degrees F. Line an 8 inch square metal pan with 
foil and spray foil with cooking/baking spray.

Pulse flour, sugar and salt in food processor to mix. Add butter and 
pulse until mixture has the consistency of cornmeal. Add orange zest 
and pulse once or twice more. Measure out 1/2 cup and set aside. Dump 
remainder into pan and press into bottom. Bake for 12 minutes or 
until lightly browned.

Meanwhile, wipe out food processor or switch bowls.

Process cream cheese and sugar until creamy. Add lemon juice and 
vanilla and process another 30 seconds, scraping sides. Add egg and 
process for another 30 seconds. Add pineapple and pulse just until 
mixed. Pour this mixture over baked crust and spread to ends. 
Sprinkle reserved crumb mixture over top. Return to oven and bake for

Better Than Sex Cake

1 18.25 box yellow cake mix, prepared according to package directions

1 (20-oz) can crushed pineapple
1 1/3 cup of sugar
1 3.4 oz box French Vanilla Pudding, Prepared according to directions
11/2 Cup Heavy Cream
1 Cup flaked, sweetened, toasted coconut

Preheat oven to 350 degrees.  Prepare cake mix, using greased 13 x 9 pan and bake for 30-35 minutes.  While cake
is baking, combine pineapple and 1 Cup Sugar in saucepan, bring to boil over medium heat, stirring
constantly.  Remove from heat and allow to cool slightly.  Remove cake from oven and using handle of wooden
spoon, piece holes into cake.  Pour Pineapple mixture over hot cake and set aside.  Prepare pudding
according to directions.  Spread pudding over cake and refrigerate until thoroughly chilled.  Whip heavy
cream and remaining sugar until stiff.  Cover top of cake with whipped cream and sprinkle with toasted
coconut on top.  If any cake is left over....refrigerate.

You can also use ground beef instead of turkey..Serves 4

Ingredients
1/2 pound rigatoni
4 teaspoons olive oil
1/2 cup diced onion
1 1/2 cloves garlic, crushed
2/3 pound lean ground turkey
salt to taste
freshly ground black pepper
2 cups tomato sauce
2/3 cup halved and pitted black olives
1/3 cup fresh, chopped basil
2/3 cup grated, fat-free mozzarella cheese
1/3 cup freshly grated Parmesan cheese

Cooking Instructions
1. Preheat the oven to 350°F. 
2. Bring 1/2 gallon of salted water to boil. Add the rigatoni and cook until al dente, about 8 to 10 minutes.
Drain and rinse with cold water. 
3. Meanwhile, heat the olive oil in a large skillet over medium heat. Add the onion and cook until soft and
translucent, about 4 to 5 minutes. Add the garlic and cook 30 seconds more. Add the ground turkey, season
with salt and pepper, and brown. Drain off the excess fat. 
4. Add the tomato sauce and olives, and simmer for 5 minutes. Adjust the seasoning. 
5. In a casserole dish, toss the rigatoni, meat sauce and basil together. Sprinkle with the cheeses.

Indonesian Fried Noodles (Mie Goreng)

1 lb (450 g) Chinese mein noodles, or vermicelli or linguine
4 Tbs (60 ml) peanut oil
1 onion, finely chopped
4 cloves garlic, finely chopped
1 to 2 (to taste) fresh red chile peppers, seeded and diced
2 pork chops, meat removed from bone, trimmed and finely diced
1/2 lb (250 g) shrimp, shelled and deveined
3 stalks celery, finely sliced
1 cup (250 ml) finely sliced bok choy or green cabbage
Salt and freshly ground black pepper to taste
3 Tbs soy sauce (or to taste)

For the garnish:
Fried onion flakes (recipe follows)
4 spring onions, both green and white parts, finely sliced
1 cucumber, thinly sliced

Cook the noodles according to package directions until 'al dente', or firm to the tooth.  Drain and
immediately rinse under cold water to stop the cooking.  Set aside.  Heat the peanut oil in a wok or large
skillet over high heat and fry the onion, garlic, and chile pepper until the onion is soft and golden.  Add
the pork and the shrimp and stir until cooked through.  Add the celery, bok choy, salt, and pepper, and stir
for a minute or two.  You want the vegetables to be hot but crisp.  Add the cooked noodles and continue
stirring until the noodles are heated through.  Add the soy sauce and pile onto a serving dish.  Sprinkle
with the fried onion flakes and scallions, and decorate the edge of the plate with the sliced cucumber. 
Serve immediately.  Serves 6 to 8.

1  large tomato, seeded and chopped
1/2  cup chopped red sweet pepper
1/2  cup chopped red onion
1/4  cup snipped fresh cilantro or parsley
1  fresh jalapeño chile pepper*, seeded and finely chopped
  Toasted pita bread wedges (optional)

Directions
1. For dressing: In a screw-top jar, combine lemon juice, oil, chili 
powder, cumin, pepper sauce, Old World Central Street Seasoning, salt,

        1 cup water
        4 tablespoons butter, melted 
        1.. Heat oven to 350 degrees F. 
        2.. Spread sauerkraut in a 13x9x2-inch baking dish. Sprinkle sauerkraut with caraway seed; spread
cranberry sauce over. Arrange pork chops on top of cranberry sauce.

2  pints shucked oysters (4 cups), undrained
2  tablespoons butter
2/3  cup sliced leek (2 medium)
2  tablespoons all-purpose flour
1/2  teaspoon salt
1/4  teaspoon dried tarragon, crushed
2 1/2  cups half-and-half, light cream, or whole milk
  Croutons (optional)

directions
1. Drain oysters, reserving liquid. Strain liquid through a fine-mesh 
sieve. Add enough water to strained liquid to measure 2 cups. Set aside. 
Rinse oysters thoroughly to remove any bits of sand or shell.

2. In a large saucepan, heat butter over medium heat. Add leek; cook 
until tender, stirring frequently. Stir in flour, salt, and tarragon. 
Slowly stir in half-and-half. Cook and stir until mixture is slightly 
thickened and bubbly. Cook and stir for 1 minute more. Remove from heat. 
Cover and keep warm.

3. In a medium saucepan, combine reserved 2 cups oyster liquid and 
oysters. Bring just to simmering over medium heat; reduce heat. Cook for 
3 to 5 minutes or until oysters curl around the edges, stirring 
occasionally. Skim and discard fat from surface of cooking liquid. Stir 
oyster mixture into cream mixture. Heat through. If desired, garnish 
each serving with croutons. Makes 10 appetizer or 6 main-dish servings
