Salsa Mac & Beef
Provided by Campbell's Kitchen

1 lb. ground beef
3 1/2 cups Swanson® Beef Broth
3 cups uncooked shell-shaped pasta or 2 cups pasta
1 can (10 3/4 oz.) Campbell's® Condensed Cheddar Cheese Soup
1/2 cup Pace® Chunky Salsa 

COOK beef in skillet until browned. Pour off fat.

ADD broth. Heat to a boil. Stir in pasta. Cook over medium heat 10 min. or until pasta is done, stirring often.

ADD soup and salsa. Heat through, stirring occasionally. 

Serves 4.

TIP: Swanson Kitchen Tip: This recipe is also great using Swanson® Lower Sodium or Certified Organic Beef
Broth in place of the regular beef broth.

affectionately known as the Niagara Fruit belt". This narrow belt of fine agricultural land, extending
along the south shore of Lake Ontario from Niagara Falls to the City of Stoney Creek, is protected by the
Niagara Escarpment. The moderate year-round climate promotes a long growing season for a multitude of
fruits. Berries and vegetables. Many of Canada's finest wineries are located among the lush vineyards of
Niagara. Nestled in the heart of the Niagara Fruit belt, in the village of Winona, is our little church.

  12                    sun-dried tomatoes -- dry-pack
  1                can  chickpeas -- (540 mL) drained
  15                    fresh basil leaves
  2             cloves  garlic
     1/4           cup  cold water
  3         Tablespoon  olive oil
  3         Tablespoon  lemon juice
  1           teaspoon  cumin powder
  1           teaspoon  salt
     1/2      teaspoon  Chili Powder

Pour boiling water over sun-dried tomatoes. Let soften for about 5 minutes. Drain and coarsely chop.
Combine remaining ingredients with tomatoes in food processor. Puree until smooth. Cover and chill to
let flavours blend. Serve with crackers, vegetable sticks or pita bread.

I often serve this appetizer in the summer, using basil and garlic from the garden.

  1                can  black beans -- drained and rinsed
  1                can  corn -- drained
  2                     plum tomatoes -- diced (2 to 3)
  1                     avocado -- diced
  3                     Green Onion -- (3 to 4) diced
     1/4           cup  red wine vinegar
     1/4           cup  vegetable oil -- or olive oil
     1/2           tsp  garlic salt

Mix first 5 ingredients together in a bowl. Mix dressing ingredients together in a small bowl, then add to
the bean mixture. Refrigerate and let sit, stirring often for 2 hours before serving. Serve with
"Scoops". Serves lots.

  2         Tablespoon  butter -- or margarine
     1/2           cup  red bell pepper -- chopped
  2         Tablespoon  green pepper -- chopped
  1                     garlic clove -- minced
  2         Tablespoon  flour
     1/4      teaspoon  white pepper
  1                cup  milk
     1/4           cup  grated Parmesan cheese
     1/2           cup  crab meat -- frozen or canned cooked
                        Grated Cheddar cheese

Heat oven to 350°F. Grease 9 inch pie pan. Melt butter in skillet. Add red and green pepper and garlic. Cook
and stir 2 to 3 minutes or until vegetables are tender. Stir in flour and pepper. Cook 1 minute. Gradually
add milk. Cook until mixture boils, stirring constantly. Stir in Parmesan cheese. Remove from heat; fold
in crab meat. Pour into greased pan. Sprinkle with Cheddar cheese. Bake at 350°F for 10 to 15 minutes or
until thoroughly heated and cheese is melted. Serve with Melba rounds, tortilla chips or your favourite

Texas Hill Country T-Bones

Ingredients
1/3  cup snipped fresh sage or 4 tsp. dried sage, crushed 
1-1/2  tsp. coarse salt 
1-1/2  tsp. ground cumin 
1  tsp. crushed red pepper 
2  medium red onions 
4  8-oz. beef T-bone steaks, cut 1 inch thick 
  Sweet Pepper Salsa 

Directions
1. For rub, in a small bowl combine the sage, salt, cumin, and red 
pepper; set aside. Peel onions; halve and very thinly slice with a 
mandoline or sharp knife. Place onions in a grill basket directly over 
medium heat. Grill about 15 minutes or until browned and crisp, 
rearranging and turning once. Remove onions and set aside. 

2. Meanwhile, trim fat from steaks. Sprinkle rub evenly over both sides 
of steaks; pat in with your hands. 

3. Place steaks on the rack of the grill directly over medium heat. 
Grill to desired doneness, turning once halfway through grilling. (Allow 
11 to 15 minutes for medium-rare doneness [145 degrees F] or 14 to 18 
minutes for medium doneness [160 degrees F].) Serve with grilled onions 
and Sweet Pepper Salsa. Makes 4 servings. 

Sweet Pepper Salsa: In a medium bowl combine 1 medium red sweet pepper, 
seeded and finely chopped (3/4 cup); 1/2 cup finely chopped papaya; 1/2 
cup snipped fresh cilantro; 1/4 cup finely chopped jicama; 2 Tbsp. lime

Hummingbird Cake

Ingredients
1-1/2  cups sugar 
1-1/2  cups all-purpose flour 
1  teaspoon baking soda 
1/4  teaspoon salt 
1/4  teaspoon ground cinnamon 
1  8-ounce can crushed pineapple (juice pack), drained 
1/2  cup cooking oil 
4  eggs, lightly beaten 
1  teaspoon vanilla 
1  cup chopped bananas 
1  cup chunky-style applesauce 
2/3  cup toasted, chopped walnuts 
  Cream Cheese Frosting (see recipe below) 
1-1/2  cups toasted, chopped pecans 
2  tablespoons toasted, finely chopped pecans (optional) 

Directions
1. Grease and lightly flour two 9x1-1/2-inch round cake pans; set aside. 

2. In a large mixing bowl, combine the sugar, flour, baking soda, salt, 
and cinnamon. Add drained pineapple, oil, eggs, and vanilla. Beat with 
an electric mixer until combined, scraping the sides of the bowl 
occasionally. Stir in bananas, applesauce, and walnuts. Divide batter 
between prepared pans. 

3. Bake in a 350 degree F oven about 35 minutes or until top springs
