  2             slices  bacon
  1                cup  long-grain white rice
  1              small  green or red bell pepper, chopped
  1              small  onion, chopped
  1                cup  chopped mushrooms
  1                     carrot, finely chopped
  1 1/2           cups  chicken stock
     1/2           cup  dry white wine
     1/2      teaspoon  salt
     1/8      teaspoon  pepper
  2          teaspoons  chopped sage
  6                     chicken thighs without skin
                        paprika
                        Chopped parsley
Cook bacon over medium-high heat in 10-inch skillet until crisp. Stir in rice, and cook until rice turns a
light golden color. Add bell pepper, onion, mushrooms, carrot, stock, wine, salt, pepper and sage. Stir
until well mixed. Arrange chicken thighs on top, sprinkle with paprika.
Cover, reduce heat and simmer 35 to 40 minutes or until chicken is cooked through. Sprinkle with parsley
before serving. Makes 6 servings.

Famous Recipes - Moussaka Casserole

Moussaka Casserole

4 small eggplants
1 1/2 teaspoons salt
1 1/2 tablespoons oil
3 tablespn butter
1 1/2 pounds beef (can use lamb)
2 chopped onions
freshly ground black pepper
1/4 teaspoon cinnamon
4 ripe tomatoes, peeled, seeded and chopped
3 tablespoons chopped parsley
2 or 3 tablespoons water
6 tablespoons dry breadcrumbs
6 tablespoons grated parmesan cheese
3 egg yolks
2 cups Bechamel sauce (see below)

Peel and slice eggplants. Sprinkle with 1 teaspoon salt and set aside
in a colander for 15 mins. Rinse and drain.
Heat oil and fry eggplant until lightly browned on both sides. Drain
on paper towel. Heat butter and brown the meat.
Add onions and fry until soft. Season with remaining salt, pepper and
cinnamon. Add tomatoes, parsley and water.
Simmer for 20 mins. Sprinkle half the breadcrumbs into a buttered
baking dish and cover with half the meat mixture.
Add half the eggplant slices and half the grated cheese. Repeat with
remaining meat, eggplant and half the remaining cheese. Beat the egg
yolks in a bowl.
Beat in a few tablespoons of hot Bechamel sauce and add to remaining

Country Italian Beef

2 pounds boneless beef chuck roast
8 ounces tiny new potatoes, halved or quartered
2 medium carrots or parsnips, peeled and cut into 1- to 2-inch pieces
1 large onion, chopped (1 cup)
1 medium fennel bulb, trimmed and cut into 1/2-inch-thick wedges
1 teaspoon dried rosemary, crushed
1 14-ounce can beef broth
1 cup dry red wine or beef broth
1 6-ounce can tomato paste
2 tablespoons quick-cooking tapioca
1/2 teaspoon ground black pepper
4 cloves garlic, minced
1 to 2 cups basil leaves, spinach leaves, or torn fresh escarole

Trim fat from meat. Cut meat into 2-inch pieces. Set aside. In a 4-
to 5-quart slow cooker, combine potatoes, carrots or parsnips, onion,
and fennel. Add meat; sprinkle with rosemary.

In a medium bowl, whisk together broth, wine, tomato paste, tapioca,
pepper, and garlic. Pour over mixture in cooker. Cover and cook on
low-heat setting for 8 to 10 hours or on high-heat setting for 4 to 5
hours. Just before serving, stir in basil.

Makes 6 to 8 servings

Havana Fritas

Ingredients
1  lb. ground beef 
6  to 8 oz. ground chorizo 
1  tsp. salt 
1/2  tsp. freshly ground black pepper 
1/4  cup mayonnaise 
1  tsp. hot pimenton (smoked sweet paprika) or hot paprika 
8  4-inch-diameter cocktail rolls, split and toasted 
1  1-3/4 oz. can shoestring potatoes (1-1/2 cups) 

Directions
1. In a large bowl, combine ground beef, chorizo, salt, and black 
pepper; mix well. Shape mixture into eight 1/2-inch-thick patties. 

2. For a charcoal grill, grill patties on the rack of an uncovered grill 
directly over medium coals for 10 to 13 minutes or until done (160 
degrees F), turning once halfway through grilling. (For a gas grill, 
preheat grill. Reduce heat to medium. Place patties on grill rack over 
heat. Cover; grill as above.) 

3. Meanwhile, in a small bowl, combine mayonnaise and hot pimenton. 
Generously spread the top half of each roll with the mayonnaise mixture. 
Place the burger on the bottom half of the roll and heap with shoestring 
potatoes. Add roll tops and press together. Makes 8 servings

Famous Recipes - Cabage bean soup


Cabbage Bean Soup

3 tbs olive oil
3 leeks, chopped
1 onion, chopped
2 carrots, chopped
2 ribs celery, chopped
2 clove garlic, minced
2 cups vegetable broth
1/2 lb green beans
3 cups Italian plum tomatoes, chopped
1 lb green cabbage, shredded
3 cups cooked cannellini beans
1 cup water
Salt and pepper
1 Loaf dry French bread, sliced
Olive oil
Parmesan

In hot oil, cook leeks, onion, carrot, celery, and
garlic. Add broth. Simmer 10-15 mins. Add green beans,
tomatoes, cabbage. Heat. Add beans, water, salt and
pepper. Cover, simmer until cooked (test by tasting).
Place a slice of bread in individual bowls; drizzle
with olive oil; sprinkle with Parmesan and ladle soup
on top

Cookies and Cream Cheesecake

6 tbsp. butter, softened
2 cups cream-filled cookies (The cookies (24) should be chocolate cream filled cookies and beat to as fine
as possible)
1 envelope unflavored gelatin
1/4 cup cold water
3/4 cup milk
1/2 cup sugar
8 oz cream cheese, softened
1 cup whipping cream, whipped
1 1/4 cup cream-filled cookies (These cookies should be chocolate cream filled cookies and should be
coarsely chopped) 

Combine 2 cups fine cookie crumbs and butter, press onto bottom of 9-inch springform pan. Soften gelatin in
water; stir over low heat until dissolved. 

Combine cream cheese and sugar, mixing at medium speed with electric mixer until well blended. Gradually
add gelatin mixture and milk, mixing until
well blended. 

Chill until mixture is thickened but not set. Fold in whipped cream. Reserve 1 1/2 cup cream cheese mixture;
pour remaning cream cheese mixture over crust. Top with cookies and reserved cream cheese mixture. Chill
until firm.

Famous Recipes - Welsh Rarebit

Welsh Rarebit

3 tablespoons unsalted butter
3 tablespoons flour
2/3 cup amber beer (like Yuengling)
10 ounces extra-sharp Cheddar cheese, grated
1 teaspoon dry English mustard
1 teaspoon Worcestershire sauce
2 to 3 drops Tabasco sauce
6 to 8 slices white or rye toast sliced in half
6 slices bacon, cooked to crispy

Melt the butter in a saucepan over low heat, add the flour and whisk to 
make a roux. Cook for 2 to 3 minutes but do not brown. Whisk in the beer 
and boil the mixture for 2 to 3  minutes while whisking. Reduce heat to 
low, add the Cheddar cheese, mustard, Worcestershire, and Tabasco pepper 
sauce, and cook, stirring, until hot through but _not_ boiling.

Spoon the Cheddar mixture over the toast and serve with crispy bacon.

1 (15 ounce) can chickpeas (garbanzo beans), drained
1/2 onion, chopped

DIRECTIONS
In a medium bowl combine chickpeas, onion, cucumber, tomato, red wine
