Banana Split-Cheesecake Squares
1-1/2 cups Honey Maid graham cracker crumbs
1/3 cup butter or margarine, melted
3 (8 oz.) pkgs. Philadelphia cream cheese, softened
3/4 cup sugar
1 tsp. vanilla
3 eggs
1/2 cup mashed ripe bananas
1 cup halved strawberries
1 bananas, sliced, tossed with 1 tsp. lemon juice
8 oz. can pineapple chunks, drained

Heat oven to 350.  Mix graham crumbs and butter; press firmly onto  bottom of
13x9" baking pan.  Mix cream cheese, sugar and vanilla in large  bowl with
electric mixer on medium speed until well blended.  Add eggs, one  at a time,
mixing on low speed after each addition just until blended.   Stir in mashed
bananas.  Pour over crust.  Bake 30 minutes or until  center is almost set.
Cool.  Refrigerate lat least 3 hours or  overnight.  Serve topped with the
strawberries, sliced bananas and  pineapple.  Store leftover cheesecake in
refrigerator.

Jazz It Up:
Prepare and refrigerate as directed.  Sprinkle with 1/4 cup finely  chopped
Planters pecans and drizzle with melted Baker's semi-sweet baking  chocolate
before cutting into pieces.

Cut the fish into four portions and put into a greased casserole
dish. Season.
Cut the lemon into thin slices and place on top of the fish. Add the
butter, cut in pieces and bake, covered, at 180C/350F/gas mark 4 for
30 minutes. Drain off the liquid to use as a sauce and serve at once.

Rocky Road No-Bake Cheesecake
3 squares Baker's semi-sweet baking chocolate, divided
2 (8 oz.) pkgs. Philadelphia cream cheese, softened
1/3 cup sugar
1/4 cup milk
2 cups thawed Cool Whip
3/4 cup Jet-Puffed miniature marshmallows
1/3 cup chopped Planters cocktail peanuts
1 Oreo pie crust (6 oz.)

Microwave 1 of the chocolate squares in small microwaveable bowl on high 1
minutes; stir until chocoalte is completely melted.  Set aside.  Beat  cream
cheese, sugar and milk in large bowl with electric mixer on medium speed  until
well blended.  Add melted chocolate; mix well.  Gently stir in  whipped
topping, marshmallows and peanuts.  Coarsely chop remaining 2  chocolate squares;
stir into cream cheese mixture.  Spoon into crust.   Refrigerate 4 hours or
until set.  Store leftover pie in  refrigerator.

How to Soften Cream Cheese:
Place completely unwrapped packages of cream cheese on microwaveable  plate.
Microwave on high 15 to 20 seconds or until slightly  softened.

Dough:
1/2 cup water
1/4 cup butter(No substitutes)
1/2 cup all-purpose flour
2 large eggs

Vanilla Filling:
1 1/4 cups cold fat-free milk
1/4 teaspoon vanilla extract
1 (1-ounce) package sugar-free instant vanilla pudding mix
1 cup fat-free whipped topping

Chocolate Topping:
1 1/2 cups cold fat-free milk
1 (1.4-ounce) package sugar-free instant chocolate pudding mix

In a saucepan, bring water and butter to a boil. Add flour all at
once, stirring until a smooth ball forms. Remove from the heat; let
stand for 5 minutes. Add eggs, one at a time, beating well after each
addition. Continue beating until mixture is smooth and shiny.

Transfer to a resealable plastic bag; seal.

Cut a 1-inch hole in one corner of bag. Pipe eight 3 1/2-inch logs
onto an ungreased baking sheet.

Bake at 450*F (230*C) for 10 minutes. Reduce heat to 400*F (205*C);

12 OREO Chocolate Sandwich Cookies, crushed
2 Tbsp.  butter, melted
1/2 cup peanut butter
2 cups  cold milk
2 pkg. (4-serving size each) JELL-O Chocolate Flavor Instant Pudding &
Pie Filling
2 cups  thawed COOL WHIP Whipped Topping, divided
2 Tbsp. hot fudge ice cream topping
1/4 cup  candy-coated peanut butter pieces

MIX crushed cookies and butter; press firmly onto bottom of 8-inch
square pan.

PLACE peanut butter in large bowl. Gradually add milk, stirring with
wire whisk until well blended. Add dry pudding mixes. Beat 2 min. or
until well blended. (Mixture will be thick.) Stir in 1 cup of the
whipped topping. Spread onto prepared crust; top evenly with remaining
1 cup whipped topping.

REFRIGERATE 3 hours or until set. When ready to serve, microwave fudge
topping as directed on package; drizzle over dessert. Sprinkle with
candies. Store leftovers in refrigerator.

Yellow Rice with Raisins

2 Tbs (30 ml) butter or olive oil
1 cup (250 ml) uncooked long-grain white rice
2 cups (500 ml) boiling water
One 2-inch (5 cm) piece of cinnamon stick
1/2 tsp (2 ml) ground turmeric
1/2 tsp (2 ml) ground cumin
A pinch of crumbled saffron threads or ground saffron
1/2 tsp (2 ml) salt
1/2 cup (125 ml) seedless raisins
1 tsp (5 ml) sugar or more, to taste

Melt the butter in a saucepan over moderate heat. Add the rice and cook, stirring constantly, for 1 minute.
Add the remaining ingredients except for the sugar and simmer, tightly covered, until the rice is tender,
about 20 minutes. Remove the pan from the heat and discard the cinnamon stick. Sprinkle the sugar on top of
the rice and fluff the rice with a fork. Cover and let stand for 15 minutes. Fluff the rice again prior to
serving. Serves 4 to 6.

Mocha Cream Pie (Diabetic) 
Serves: 8 

1 (9-in.) baked pie shell 
1/4 c. instant coffee powder 
2 c. skim milk 
3/4 c. granulated sugar replacement (Splenda) 
1/3 c. flour 
1 oz. unsweetened baking chocolate, melted 
2 eggs 
1 egg yolk 
1 tsp. vanilla 

Combine coffee powder and milk in a heavy saucepan. Place over low heat, and allow milk to scald (Do Not
Boil). Strain. 

Combine sugar replacement and flour in a saucepan. Slowly stir in coffee flavored milk. Cook and stir until
mixture thickens. Stir in chocolate. 

Beat eggs and egg yolk together. Add a small amount of hot mixture to eggs; then return to saucepan. Cook and
stir 2 minutes longer. Remove from heat and stir in vanilla. Cool slightly. 

Transfer to pie shell. Cool completely. 

Exchanges: One serving (w/o crust) equals: 1/2 low-fat milk...1 fat...99 calories...6 gm carbohydrate

Scrumptious Meat Loaf 

Use extra lean ground beef to lower the fat content in this meat loaf. 

1 lb  ground beef, extra lean 
1/2 cup tomato paste (4 ozs)  
1/4 cup onion, chopped  
1/4 cup green peppers 
1/4 cup red peppers  
1 cup tomatoes, fresh, blanched, chopped  
1/2 tsp mustard, low sodium  
1/4 tsp ground black pepper  
1/2 tsp hot pepper, chopped  
2 cloves garlic, chopped  
2 stalks scallion, chopped 
1/2 tsp ginger, ground  
1/8 tsp nutmeg, ground  
1 tsp orange rind, grated  
1/2 tsp thyme, crushed  
1/4 cup bread crumbs, finely grated  

Mix all ingredients together. 
Place in 1-pound loaf pan (preferably a pan with a drip rack) and bake
covered at 350° F for 50 minutes. 
Uncover pan and continue baking for 12 minutes.

Makes 6 servings--Serving size: 6 (1-1/4-inch) thick slices

Apple Bread Pudding

8 to 9 slices of your favorite bread
4 Tbs butter
3 apples, preferably Golden Delicious
2 Tbs lemon juice
1 Tbs grated lemon rind
1/4 cup to 1/2 cup honey (optional)
1 tsp cinnamon
1/4 tsp nutmeg
1 cup apple juice
1/2 cup golden raisins
1/2 cup toasted walnuts, optional

Spread bread with butter and toast both sides under a
broiler. Cut bread into chunks. Place all ingredients in
the slow cooker except walnuts. The amount of honey should
be determined by tartness of apples. Set slow cooker on
low and allow to cook for 5 to 6 hours. If possible,
gently stir halfway through cooking process. If desired,
stir in toasted walnuts just before serving.

Bavarian Beef 

This classic German stew is made with lean trimmed beef stew meat and cabbage.

1-1/4 lb lean beef stew meat (trimmed of fat), cut in 1-inch pieces 
1 Tbsp vegetable oil 
1 large onion, thinly sliced 
1-1/2 C water 
3/4 tsp caraway seeds 
1/2 tsp salt 
1/8 tsp black pepper 
1 bay leaf 
1/4 C white vinegar 
1 Tbsp sugar 
1/2 small head  red cabbage, cut into 4 wedges 
1/4 C crushed gingersnaps 

Brown meat in oil in a heavy skillet. Remove meat and sauté onion in remaining oil until golden. Return meat
to skillet. Add water, caraway seeds, salt, pepper, and bay leaf. Bring to a boil. Reduce heat, cover and
simmer 1-1/4 hours. 
Add vinegar and sugar; stir. Place cabbage on top of meat. Cover and simmer 45 minutes more. 
Arrange meat and cabbage on a platter and keep warm. Strain drippings and skim off fat. Add enough water to
drippings to yield 1 cup of liquid. Return to skillet with gingersnap crumbs. Cook and stir until
thickened and mixture boils. Serve with meat and vegetables. 

Yield: 5 servings--Serving Size: 5 oz
