Chocolate Chip Toffee Cookies 

1 cup packed brown sugar
1/2 cup butter or margarine, softened
1/2 cup vegetable shortening
1/4 cup honey or maple sugar
1 large egg
2 cups all purpose flour
1 tsp baking soda
1/2 tsp baking powder
1/4 tsp salt
1 pkg (12 ounces) miniature semisweet chocolate chips
1 pkg (7 1/2 ounces) almond brickle chips

Heat 350 degrees. Beat brown sugar, butter,
shortening, honey, and egg in large bowl with electric
mixer on medium speed, or mix with spoon. Stir in
flour, baking soda, baking powder, and salt. Stir in
chocolate chips and brickle chips. Drop dough by
tablespoonfuls about 2 inches apart onto ungreased
cookie sheet. Bake 8-11 minutes or until edges are
golden brown (these will have soft centers). Cool 3 to
4 minutes. Remove from cookie sheet to wire rack.

Strawberry Rhubarb Crumb Pie

Skillet Crust
2 1/4 cups all-purpose flour
1 cup sugar
1/4 teaspoon salt
1 1/2 sticks (3/4 cup) unsalted butter
1 teaspoon pure vanilla extract

1. In a medium sized bowl, combine the flour, sugar,
and salt and set aside.

2. In a very large skillet over medium-low heat, melt
the butter gently–do not brown–then stir in the
vanilla. Add the dry ingredients from the bowl and
turn off heat. Using a wooden spoon, mix the
ingredients to form crumbs (they will be a bit clumpy,
but be persistent). Allow the crumbs to cool for
several minutes.

3. As soon as the crumbs are cool enough to handle,
transfer two cups of them to a 9 1/2-inch deep-dish
pie pan that has been buttered. Use your hands to
gently press the crumbs evenly into the bottom and up
the sides of the pan. Reserve the remaining crumbs to
top the pie.

Filling
4 cups fresh rhubarb stalks, leaves removed, sliced in
1/4-inch thick crosswise slices

Apple Cranberry Crisp

3 cups chopped apples, unpeeled
2 cups raw cranberries
3/4 to 1 cup sugar

TOPPING:
1-1/2 cups old fashioned or quick cooking oats
1/2 cup brown sugar, packed
1/3 cups all-purpose flour
1/3 cup chopped walnuts or pecans
1/2 cup butter, melted

Combine apples, cranberries & sugar in 8-inch square
baking dish. Mix thoroughly to blend; set aside.
Combine topping ingredients until crumbly. Spread
evenly over fruit layer. Bake at 350 degrees for 1
hour or until the fruit is fork tender. Serve warm
with milk poured over, if desired.

3 cans (15 oz each) sliced peaches in light syrup, drained, 1 cup syrup 
reserved 
1 box Betty Crocker® SuperMoist® yellow cake mix 
1 teaspoon ground cinnamon 
1/8 teaspoon ground nutmeg 
2 eggs 
1 cup chopped pecans 
1 tablespoon sugar 

1. Heat oven to 350F (325°F for dark or nonstick pan). In 13x9-inch pan, 
melt butter in oven. Place peach slices on paper towels to absorb 
liquid. 
2. In large bowl, mix cake mix, cinnamon, nutmeg, eggs and 1 cup 
reserved peach syrup with spoon until well blended. Drop batter by 
spoonfuls over butter in pan; spread slightly without stirring. Arrange

Ingredients
1  fresh pineapple, peeled, packed in juice 
1  Tbsp. olive oil 
1  14.8-oz. pouch cooked long grain rice 
12  oz. cooked ham, coarsely chopped 
1  cup chopped or sliced sweet peppers 
1  jalapeño pepper, sliced 
1/2  15-oz. can black beans, rinsed and drained (3/4 cup) 
  Lime Wedges 

Directions
1. Remove pineapple from container, reserving juice. Cut pineapple in 
3/4-inch slices; discard core if present. Heat oil in 12-inch skillet 
over medium-high heat; add pineapple slices. Cook 3 to 4 minutes or 
until beginning to brown. Divide pineapple among four plates. 

2. Meanwhile, prepare rice according to package directions. Add ham and 
peppers to skillet; cook 3 minutes, stirring occasionally. Add beans and 
rice. Cook, stirring occasionally, 3 minutes or until heated through. 
Stir in reserved pineapple juice. Serve with lime wedges. Makes 4 
servings.

1/4 pound thin-sliced pepperoni sausage, slices cut in half
1/4 cup fresh lemon juice, from about 1 lemon
1 teaspoon dried oregano
3/4 teaspoon salt
1/4 teaspoon fresh ground black pepper
1/2 cup olive oil
1 head romaine lettuce, large, cut into bite-size pieces (about 1
1/2 quarts)
1 English cucumber, halved lengthwise and cut into thin slices
3 tomatoes, cut into wedges
1 red onion, cut into thin slices
1 green bell pepper, cut into 1/2-inch pieces
3/4 cup Kalamata olives, pitted
8 ounces feta cheese, crumbled (about 1 1/2 cups)

In a large frying pan, cook the pepperoni over moderate heat, stirring
occasionally, until lightly browned, about 3 minutes. Drain.
In a large glass or stainless-steel bowl, whisk the lemon juice,
oregano, salt, and black pepper. Add the oil slowly, whisking. Add the
lettuce, cucumber, tomatoes, onion, bell pepper, olives, cheese, and pepperoni
and
toss to coat.

1/3 cup olive oil
4 garlic cloves, minced
2 cups finely diced onions
1 cup dry white wine or vermouth
1 cup clam juice
1 can ( 35 ounces ) Italian plum ( Roma ) tomatoes, drained, seeded and chopped
( reserve juice )
1/2 cup chopped fresh basil
2 teaspoons salt
1 1/2 teaspoons chopped fresh thyme or 1/2 teaspoon dried
1/2 teaspoon red pepper flakes
24 mussels, cleaned
1/2 pound medium shrimp, shelled and deveined
1 pound cod, cut into 2-inch cubes
1 tablespoon champagne, balsamic or sherry vinegar
3/4 pound linguine, cooked according to package directions ( optional )

In Dutch oven, heat oil over medium-high heat. Add garlic and saute 30 seconds. Add onions and saute,
stirring frequently, until translucent, about 10 minutes. Add wine and cook until reduced by half. Add
clam juice, tomatoes and reserved juice. Simmer uncovered 40 minutes. ( Can be made ahead. Refrigerate up
to 2 days. Bring to a simmer over medium-low heat. ) Stir in basil, salt, thyme and red pepper. Add mussels;
cover and simmer until shells open, 1 to 2 minutes. Discard any unopened mussels. Stir in shrimp and cod;
cover and simmer until opaque, about 5 minutes. Stir in vinegar. Serve over linguine. Makes 6 servings,
about 535 calories each.

CLASSIC ORIGINAL "TEXAS" CHICKEN FRIED STEAK

2 c. of all purpose flour
Salt and pepper to taste
2 c. milk 
2 c. Pure vegetable shortening for frying
4  pcs beef round steak - boneless

Place the round steak on a cutting board, trim and discard bone and excess fat. With a meat mallet, pound each
piece on both sides, going over meat twice in opposite directions. Set aside. Combine flour with salt and
pepper. Place a 10 inch, cast iron skillet (others will work but cast iron give the best results) over a
medium flame and add shortening to start heating. Dip the steaks in milk, then dredge both sides in the
seasoned flour, patting to work in the flour and seasonings. Test temperature of shortening by
sprinkling a few drops of milk into it. The milk should sizzle. Add steaks, taking care not to crowd them,
and cook until golden brown on both sides and fully cooked. This will take 2 to 3 minutes on each side. Serve
with cream gravy (below). 
Serves 4.

THE GRAVY:
3 c. milk
2 to 3 tbsp. all purpose flour
4 to 5 tbsp. pan drippings
Salt and pepper to taste

RIGATONI AL FORNO WITH ROASTED ASPARAGUS AND ONIONS

2 T olive oil
1 1/2 C onions cut in large chunks
6 oz rigatoni or other tube shaped pasta
8 oz asparagus, cut into 2" pieces
1/4 t salt
2 T balsamic vinegar (plus extra when serving)
freshly ground black pepper
3 T grated parmesan cheese (plus extra when serving
1/4 C bread crumbs

Preheat oven to 375°F.

Put on a large potful of water to boil.

Pour oil into b 9x13 baking dish.

Break up onion chunks with your hands, add them to the oil and stir them around so they get coated.  
Place the uncovered pan in the oven to roast for 5 minutes.

When the water reaches a rapid boil, add the pasta and let it cook while you roast the vegetables.

After the onions have been in the oven 5 minutes, stir in the asparagus and sprinkle with 1/4 t of salt.

Spread eveything into a single layer, return the pan to the oven and roast for 5 minutes longer.

Drain the pasta as soon as it is al dente and stir it into the pan of vegetables.
Add 2 T of vinegar, black papper and parmesan and mix well.
