Dauphine Potatoes

2 cups (500 ml) mashed potatoes
1 cup (250 ml) pate a choux (see below)
A grating of fresh nutmeg
Vegetable oil for deep frying
Salt to taste

Combine the mashed potatoes, pate a choux, and nutmeg and stir to combine. Form into small balls 1 to 1 1/2
inches (2.5-4 cm) in diameter. Fry in vegetable oil that has been heated to 365F (185C) until crisp and
golden brown. Drain on paper towels and season with salt while still hot. Serves 4 to 6.

Pate a Choux

1 cup (250 ml) milk
1/4 cup (60 ml) butter
1 cup (250 ml) all-purpose flour
A pinch of salt
4 eggs at room temperature

Combine the milk and butter in a pan and bring to a boil over moderate heat. Add the flour all at once and stir
vigorously with a wooden spoon until it is smooth and no longer sticks to the sides of the pan. Remove from
the heat and transfer to the bowl of an electric mixer or food processor. Add the eggs one at a time and
process until completely incorporated before adding the next egg. To make cream puff shells, spoon or
pipe the batter onto a greased baking sheet, making mounds 1 to 2 inches (2.5-5 cm) inches in diameter. Bake
in a preheated 400F (200C) oven for 10 minutes. Reduce the heat to 350F (180C) and bake until puffed up and
golden brown, about 25 minutes.

Ingredients
5  cups cubed French bread (1-inch cubes) 
1  3.5-ounce package sliced pepperoni, coarsely chopped 
1/4  cup pepperoncini salad peppers, drained, stemmed, and chopped 
1/2 of a  10-ounce package frozen chopped spinach, thawed and well 
drained 
1/4  cup oil-packed sundried tomatoes, drained and chopped 
1  cup shredded Italian-blend cheese (4 ounces) 
3  eggs, lightly beaten 
1-1/2  cups milk 
1  teaspoon dried Italian seasoning, crushed 
  Dash cayenne pepper 
1/4  cup grated Parmesan cheese 

Directions
1. Preheat oven to 350F. Place bread cubes in a 15x10x1-inch baking pan. 
Bake, uncovered, in the preheated oven for 10 minutes, stirring once. 

2. Spread half of the bread cubes in a greased 2-quart square baking 
dish. Top with half of the pepperoni, half of the pepperoncini peppers, 
all of the spinach, and all of the tomatoes. Sprinkle with 1/2 cup of 
the Italian-blend cheeses. Repeat layers with remaining bread, 
pepperoni, pepperoncini peppers, and Italian-blend cheese.

Clove-Molasses Cake

Ingredients
1 3/4  cups all-purpose flour 
3/4  teaspoon baking soda 
1/2  teaspoon ground cloves 
3  tablespoons butter, softened 
1/2  cup packed brown sugar 
1  egg 
1/2  cup mild-flavored molasses 
1/2  cup milk 
  Chocolate-Molasses Glaze (below) 

Directions
1. Preheat oven to 350 degrees F. Grease and lightly flour one 3x2-inch, 
one 5x2-inch, and one 7x2-inch round cake pan. (Or grease and lightly 
flour an 8x8x2-inch baking pan.) Set aside. In a small bowl, stir 
together flour, baking soda, and cloves; set aside. 

2. In a medium bowl, beat butter with an electric mixer on medium speed 
for 30 seconds. Add brown sugar; beat until well mixed. Beat in egg 
until fluffy. Beat in molasses on low speed. Alternately add flour 
mixture and milk to beaten mixture, beating on low speed after each 
addition just until combined. Pour 1/3 cup of the batter into the 3-inch 
pan, 1 cup of the batter into the 5-inch pan, and the remaining batter 
into the 7-inch pan. (Or spread all of the batter into the 8x8x2-inch 
pan.)

2 packages quick-rise yeast
1/2 cup warm water (110-115 degrees)
1-1/2 cup warm milk (110-115 degrees)
6 tablespoons butter, melted
1 cup sugar
1 teaspoon salt
2 eggs, beaten
6-6 1/2 cups all-purpose flour

FILLING
1 tablespoon butter
1 tablespoon all-purpose flour
1-1/2 cup orange juice
2 tablespoons grated orange peel
1 can (8 oz) crushed pineapple, drained
1/3 cup sugar
1/8 teaspoon salt

GLAZE
1/2 cup confectioners' sugar
1 tablespoon orange juice

Dissolve yeast in water. Add miIk, butter, sugar,
salt, eggs, and
1-1/3 cup flour, beat until smooth. Stir in enough of
the remaining flour to form a soft dough. On a floured
board, knead until smooth and elastic, 6 to 8 minutes.
Place in a greased bowl, turn once to grease top.

Grilled Chicken with Spicy Brazilian Tomato and
Coconut Sauce

4 tablespoons cooking oil
3 cloves garlic, minced
1 (3 pound) chicken, quartered
3/4 teaspoon salt
Fresh-ground pepper
1 onion, chopped
1 tablespoon minced fresh ginger
2 jalapeno peppers, seeds and ribs removed, minced
1 1/4 cups canned crushed tomatoes in thick puree 
1 cup canned unsweetened coconut milk
2 tablespoons chopped cilantro or parsley 

Light the grill. In a shallow dish, combine 3
tablespoons of the oil with two-thirds of the minced
garlic. Coat the chicken with half of the garlic oil
and season with 1/4 teaspoon of the salt and 1/8
teaspoon pepper. Grill the chicken over moderately
high heat, basting with the remaining garlic oil,
until just done, about 10 minutes per side for the
breasts, 13 for the legs.
Meanwhile, in a medium saucepan, heat the remaining 1
tablespoon oil over moderately low heat. Add the onion
and cook, stirring occasionally, until translucent,
about 5 minutes. Add the remaining garlic, the ginger,
and the jalapenos, and cook, stirring, for 1 minute
longer. Add the tomatoes, the coconut milk, the
remaining 1/2 teaspoon salt, and a pinch of pepper.

Heavenly Lemon Cake - serves 8 

Preparation - 15 minutes, Cooking time - 30 minutes 

1/2 cup and 1 tbsp butter 
3/4 cup sugar 
1 1/2 tbsp grated lemon rind (2 lemons) 
2 eggs, beaten 
1/2 cup sour cream 
1/2 cup lemon juice 
3 cups self-rising flour 

Preheat the oven to 350 F. Beat together the butter,
sugar, and lemon rind, using an electric whisk, until
smooth and light. Beat in the eggs, sour cream, and
lemon juice. 

Sift over the flour and carefully fold in with a metal
spoon. Spoon into a greased 8 inch cake pan and bake
for 40 minutes until firm and springy to the touch.
Allow to cool slightly before transferring to a wire
rack. 
Slice and serve warm with cream as a dessert, or cool
completely and serve with a nice cup of tea. 

Variation: Make this scrumptious cake a little more
child-friendly by topping it with a simple frosting:
sweeten 7 oz soft cheese with 2 tbsp of sifted
powdered sugar, adding a little milk if the mixture is
too stiff.

1 1/2 tablespoons cooking oil
1 onion, chopped
1 green bell pepper, chopped
3 cloves garlic, minced
1 1/2 pounds ground beef
3 1/3 (28 ounce) cans canned whole tomatoes with their
juice, broken up
2 tablespoons tomato paste
1 tablespoon ground cumin
1 teaspoon dried oregano
1 teaspoon salt
1/4 teaspoon fresh-ground black pepper
1 1/3 cups drained and rinsed canned pinto or kidney
beans 

In a large saucepan, heat the oil over moderately low
heat. Add the onion, bell pepper, and garlic and cook,
stirring, until the vegetables start to soften, about
10 minutes. Increase the heat to moderate. Add the
ground beef and cook, stirring, until the meat is no
longer pink, about 5 minutes.
Stir in the tomatoes, tomato paste, cumin, oregano,
salt, and black pepper and bring to a simmer. Reduce
the heat and simmer, partially covered, for 10
minutes. Add the beans and simmer, partially covered,
until the vegetables are tender and the chili
thickened, about 5 minutes longer.

1 1/2 cups long-grain rice
1 (13.5 ounce) can unsweetened coconut milk

1 pound zucchini, cut into 1/4-inch dice
1 tablespoon lemon juice
1/3 cup chopped cilantro (optional) 

In a large deep frying pan or Dutch oven, heat the
cooking oil over moderately high heat. Sprinkle the
chicken with 1/2 teaspoon of the salt and 1/4 teaspoon
of the pepper. Put the chicken in the pan and brown
well on both sides, about 8 minutes in all. Remove.
Pour off all but 1 tablespoon of the fat. Reduce the
heat to moderately low.

minute longer. Stir in the coriander, cumin, rice, and

"Lime, vinegar and Italian salad dressing mix offer an alternative to the
usual Mexican-spiced chicken, onion and green pepper saute. Serve in the

INGREDIENTS:
1/2 cup olive oil
1/2 cup distilled white vinegar
1/2 cup fresh lime juice
2 (.7 ounce) packages dry 
Italian-style salad dressing mix3 whole boneless, skinless 
chicken breast, cubed
1 onion, sliced
1 green bell pepper, sliced

DIRECTIONS:
1.In a large glass bowl combine the oil, vinegar, lime juice, and dry salad
dressing mix. Mix together. Add chicken strips, onion and bell pepper. Cover
dish and refrigerate. Marinate for 3 to 6 hours.
2.In a large skillet, heat oil. Remove chicken, onion and bell pepper from marinade and saute in oil until
chicken is cooked through (juices run clear) and onion is translucent.  (Can also be grilled....)

Ingredients for Batter: 
4 large eggs 
2 cups half & half 
1 Tablespoon almond extract 
1 Tablespoon cinnamon 
butter for melting in frying pan 

Strawberry Sauce: 
2 packages frozen sliced strawberries 
2 cups sugar 
2 Tablespoons cornstarch dissolved in water 
French Bread: cut into slices 

Mix batter ingredients with a whisk. Dip bread into
batter and fry in melted butter.

Mix together strawberry sauce and heat in a sauce pan
until boiling and thickened. Serve on French Toast.
