Taco Pasta Salad

Serving Size : 6 

  1 pound ground beef
1 pound pasta twists
2 teaspoons chili powder
1/4 teaspoon salt
1 clove garlic -- minced
1/2 teaspoon ground cumin
1 large tomato -- chopped or blended in food processor
2 tomatoes -- chopped
1 medium onion -- chopped
8 ounces cheddar cheese, shredded -- 2 cups
1 cup black olives -- drained, pitted & sliced
1 1/2 cups taco sauce
4 cups lettuce -- shredded
1 avocado -- peeled & cubed
crushed corn chips
8 ounces sour cream

Cook pasta according to package directions. Rinse w/cold water. Drain. Brown beef in skillet. Drain off
fat. Add chili powder, salt, garlic, cumin & large tomato blended in food processor. You can use taco
seasoning as a substitute. Simmer about 10 minutes.

Toss pasta gently w/beef, tomato, onion, cheese & olives. Add 1 1/2 cups taco sauce. Mix gently. Serve on bed
of shredded lettuce. Toss w/avocado, crushed corn chips & sour cream.

7-Eleven's Cherry Slurpee

Serving Size : 1 

2 cups cold club soda
1/2 cup sugar
1/4 teaspoon Cherry flavored unsweetened Kool-Aid Mix -- plus
1/8 teaspoon Cherry flavored unsweetened Kool-Aid Mix
1/2 teaspoon cherry extract
2 1/2 cups crushed ice

Pour 1 cup of the club soda into a blender. Add the sugar, Kool-Aid
mix, and cherry extract. Blend this until all of the sugar is
dissolved.

Add the crushed ice and blend on high speed until the drink is a
slushy, smooth consistency, with no remaining chunks of ice.

Add the remaining club soda and blend briefly until mixed. You may
have to stop the blender and use a long spoon to stir up the contents.

If necessary, put the blender into your freezer for 1/2 hour. This
will help thicken it up. After 1/2 hour remove blender from freezer
and, again, blend briefly to mix.

This recipe yields one 32-ounce drink (or two 16-ouncers).

1 cup chopped yellow onion
2 teaspoons minced garlic
2 tablespoons vegetable oil
4 cups chicken stock
1/4 cup chopped green pepper -- (optional)
1 can tomato puree - (15 oz)
1 tablespoon finely-minced jalapeno pepper
1/2 teaspoon salt
1/4 teaspoon freshly-ground black pepper -- (optional)
1 teaspoon sugar
1 teaspoon chili powder -- (optional)
1 teaspoon Worcestershire sauce
1/2 cup hot sauce -- (optional)
4 tablespoons flour
1/2 cup water
1 pound cooked chicken -- cubed.
1 cup cream
1/4 cup non-fat sour cream
8 ounces processed cheese -- cut 1" cubes
10 corn tortillas - (6" dia) -- cut 1/4" strips, and fried
Roughly-chopped cilantro -- (optional)

Saute oil, garlic and onions in large pan or Dutch oven until soft.
Add chicken stock through hot sauce. Bring to low boil, then reduce
heat and simmer 20 minutes.

Cut tortillas into 1/4-inch strips and fry in oil or spray with oil

Boston Market Meatloaf Copycat Recipe

1 cup tomato sauce 
1 1/2 tablespoons Kraft original barbecue sauce
1 tablespoon granulated sugar
1 1/2 pounds ground sirloin (10% fat)
6 tablespoons all-purpose flour
3/4 teaspoon salt
1/2 teaspoon onion powder
1/4 teaspoon ground black pepper
dash garlic powder

Preheat oven to 400 degrees. Combine the tomato sauce, barbecue sauce 
and sugar in a small saucepan over medium heat. Heat the mixture 
until it begins to bubble, stirring often, then remove it from the 
heat.

In a large bowl, add all but 2 tablespoons of the tomato sauce to the 
meat. Use a large wooden spoon or your hands to work the sauce into 
the meat until it is very well combined.

Combine the remaining ingredients with the ground sirloin-- flour, 
salt, onion powder and ground pepper. Use the wooden spoon or your 
hands to work the spices and flour into the meat.

Load the meat into a loaf pan (preferably a meatloaf pan with two 
sections which allows the fat to drain, but if you don't have one of 
those a regular loaf pan will work). Wrap foil over the pan and
place it into the oven for 30 minutes.

1/8 cup olive oil

2 tablespoons fresh lemon juice
1/4 teaspoon garlic salt
1/2 cup heavy cream
1/4 to 1/3 cup water (only if needed if sauce is too thick)
1/2 cup plus 1 tablespoon asiago cheese, finely shredded
1/4 cup mozzarella cheese, finely shredded
1 tablespoon Romano cheese, finely shredded

Presentation
6 pieces cooked shrimp
4 black olives, sliced
1 green onion (sliced - measure out about 1 tablespoon)
1/4 cup diced tomato
4 slices Italian bread (lightly toasted 4 to 6 inches long x
1 1/2-inches thick, diagonally cut)
1/4 teaspoon crushed red pepper

Heat olive oil in a saucepan, add wine and lemon juice, when mixture starts to boil, place shrimp in pan an
cook on medium heat until shrimp curls and they are done. Remove shrimp but leave wine mixture in pan. In the
same saucepan add onion and garlic salt, saute until the onions are transparent. Add flour and water
paste, stir and cook until sauce is thick. Pour cream in sauce, stir, add the cheeses one at a time and whisk

Chi Chi's Fried Ice Cream
Serving Size : 4 

  1 pint ice cream
2 eggs -- divided, beaten
1/2 teaspoon vanilla -- divided
2 1/2 cups sweetened cornflakes -- crushed
1/2 teaspoon ground cinnamon
Cooking oil -- for deep fat frying

  Place 4 scoops (about 1/2 cup each) of ice cream in seperate plastic
bags. Freeze for 1 hour or until very firm.
  In a small mixing bowl stir together 1 egg and 1/4 teaspoon vanilla.
In a shallow bowl carefully stir together cornflakes and cinnamon.
Dip each frozen ice cream ball into the egg mixture then roll it in
cereal mixture. Return coated ice cream balls to the freezer, for
one hour, or until firm. Reserve reamining cereal mixture.
  In a small mixing bowl stir together the remaining egg, and vanilla.
Remove coated ice cream balls from the freezer. Dip ice cream balls
into egg mixture, again, and then roll them in the remaining cereal
mixture. Cover and freeze for several hours or until firm.
  In a deep fat fryer or heavy saucepan, fry frozen coated ice cream
balls, 1 or 2 at a time, in deep hot oil (375 degrees) for 15
seconds, or until golden brown. Drain on paper towels.
  Serve with melted chocolate, honey, plain or with fried white
tortillas dipped in cinnamon sugar.

Spicy Lemon Orange Chicken Serves 4 

4 skinless boneless chicken breast halves
1/3 cup red wine 
1/3 cup orange juice
1/3 cup lemon juice 
4 tablespoons chopped fresh cilantro (reserve 2 tablespoons of the
cilantro) 
4 tablespoons chopped green onions (reserve 2 tablespoons of the green
onions) 
1/2 teaspoon dried oregano leaves
1 teaspoon ground cumin
1/2 teaspoon salt 
1/4 teaspoon crushed red pepper flakes (or less depending on how spicy
you like it) 

Place all ingredients (except the reserved onions and cilantro) in a
large plastic re-sealable bag and mush together well. Refrigerate at
least 3 hrs but no longer than 24 hrs.Preheat the barbecue grill to a
medium heat.Cook uncovered for 5 mins on each side turning until cooked
thoroughly.

Grilled Guinness-Marinated Sirloin Steaks with Chived Potatoes and Tomatoes 

1 1/2 cups Guinness stout 
1 1/2 cups chicken stock 
2 sprigs fresh thyme 
1 teaspoon Worcestershire sauce 
1/2 teaspoon milled peppercorns 
1 bay leaf 
4 trimmed sirloin steaks (10 ounces each) 
1/2 cup (1 stick) butter, cut into 4 pieces 
2 large cooked potatoes, peeled and sliced lengthwise 
1 clove garlic, crushed 
1 teaspoon olive oil 
Salt and black pepper to taste 
4 plum tomatoes, peeled, seeded, and cut into chunks 
1 tablespoon chopped chives 

Prepare marinade: Combine stout, stock, thyme, Worcestershire, peppercorns and bay leaf in deep dish.
Mix thoroughly. 
Immerse trimmed steaks in marinade and refrigerate 8 hours. 
Pour marinade into saucepan and bring to boil, skimming off foam that rises to surface. Reduce marinade by
half. 
Remove from heat. Strain through fine-mesh strainer. When slightly cooled, whisk in butter, 1 piece at a
time, until it is incorporated into sauce. 
Grill steaks to desired doneness. 
Rub potatoes with garlic, oil, salt and pepper. Lay potatoes flat on sheet pan and grill on both sides until
golden brown. Overlap potatoes into a circle, place tomato chunks on top and sprinkle with chopped
chives. Place grilled potatoes and tomatoes onto center of warmed plate, lay sirloin steaks to one side
and pour sauce around steak. Makes 4 servings.

Chicken Caesar pitas
SERVES 2 

1 can (5 ounces) chunky white meat chicken packed in water, drained
3/4 cup chopped romaine lettuce
1 Roma tomato, chopped (about 3/4 cup)
1/4 cup grated fresh Parmesan cheese
1/3 cup fat-free Caesar dressing
1 whole-wheat pita bread, cut in half

In a small bowl, add the chicken, lettuce, tomato, Parmesan cheese and 
Caesar dressing. Toss to mix evenly. Cover and place in the 
refrigerator for 10 minutes.

Stuff the chicken mixture into the pita bread halves. Serve
 immediately.

Dough:
1 1/4 cups flour
6 Tblsp. sugar
Pinch of salt
4 oz. cream cheese
1/2 cup margarine
1 Tblsp. sour cream

Filling:
1/4 cup orange juice
6 Tblsp. sugar
1 cup dried apricots, chopped
1 cup confectioners' sugar
1 Tblsp. water

* Preheat oven to 325 degrees. Grease two large cookie sheets.

* Dough: in a large bowl, mix flour, sugar and salt. Cut in cream
cheese and margarine until mixture resembles cornmeal. With fork, stir
in sour cream until pastry just holds together. Form into ball. Wrap
and chill for one hour.

* Filling: Mix juice, sugar and apricots. Heat to boil. Simmer, cover
for 10 minutes, stirring occasionally until most liquid is absorbed.
Set aside and cool.

* Roll out dough and cut into squares. Place 1/2 teaspoon filling on
