Famous Recipes - KFC Biscuits - Copycats

KFC Biscuits

1 1/2 cups flour
1 1/2 teaspoon salt
1 Tablespoon sugar
1 Tablespoon baking powder
2/3 cup milk
1/3 cup vegetable shortening 

Preheat oven to 425F. Sift together flour, salt, sugar
and baking powder into mixing bowl. Make a well in the
flour mix and add the milk.

Add shortening and begin kneading with hands (to cut
in) the vegetable shortening and flour in the milk
until thoroughly mixed. Add milk, if needed to form,
and mix. Turn onto floured board, and knead gently 6
to 8 times. Pat dough to 1/2-inch thickness. Cut into
biscuits. Place on baking sheet and brown in oven
10-13 minutes. 

Makes about 9 biscuits.

Strawberry Salad
1 package strawberry Jello
1 container of cottage cheese
1 container of cool whip
1 pack of frozen or fresh strawberries
1 can of crushed pineapples

Nuts can be added if desired.
Mix all ingredients in a large bowl, refrigerate, and enjoy!!

Famous Recipes - Applebee's Tequila Lime Chicken

Applebee's Tequila Lime Chicken

1 (5 ounce) boneless skinless chicken breast
1/2 cup lime juice
1/4 cup tequila (non-alcoholic may be used)
1/2 cup tortilla chips
1/4 cup Mexi-ranch Dressing (recipe to follow)
1/4 cup shredded Cheddar jack cheese

Set oven to broil.

To prepare chicken, pour lime juice and tequila into a
sealable plastic bag. Place chicken in bag and chill.
Marinate chicken overnight.

To prepare Mexi-ranch Dressing, in a small bowl mix:

1 tablespoon salsa
3 tablespoons ranch dressing

Remove chicken from marinade and grill over medium
heat 10 minutes or until thoroughly cooked.

To assemble: Scatter tortilla chips on an oven-safe
plate. Place chicken on top of tortilla chips. Pour
Mexi-ranch dressing over chicken. Cover with the
shredded Cheddar jack cheese. Place chicken under the
broiler until cheese is melted. Be careful, plate will
be hot!

Famous Recipes - Fried Cornbread

Fried Cornbread

Cornbread is great in the fall and winter. I like to
make it to eat with chili.

- 1 cup all-purpose flour
- 3 teaspoons baking powder
- 1 cup cornmeal
- 2 tablespoons granulated sugar
- 1 egg
- 1 cup kernel corn (from can - drained)
- 3 tablespoons melted butter
- 1 cup milk
- 3/4 teaspoon salt
- 1 medium onion, diced
- 1/3 cup diced celery
- 2 jalapeno peppers, diced

Mix and sift dry ingredients, then add all other
ingredients mixing well. Heat 1 tablespoon oil in
frying pan. Drop batter by tablespoonsful into hot
oil, and fry on both sides.

Stuffed Portobello Mushrooms

This is a great grilling recipe for your vegetarian
guests.

- 2 slices bacon
- 4 large portobello mushrooms
- Olive oil, virgin
- 1/2 cup onions, minced
- 1/2 cup bell pepper, red, minced
- 1 teaspoon garlic, finely minced
- 1/2 cup fine bread crumbs
- 2 tablespoons fresh parsley, chopped
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 cup fresh Parmesan, grated

1. Cook bacon until crisp. Let cool and then crumble.
2. Prep the ports by removing the stems and with a
small spoon, carefully remove the gills and discard.
3. Clean both sides and dry with paper towel. Then
apply olive oil to both sides. Set on platter with top
side down.
4. In the same pan as the bacon, re-heat the bacon
grease and saute the onion and bell pepper for about 6
minutes.
5. Add the garlic and saute; another minute.
6. Add the bread crumbs, parsley, salt and pepper and
mix well.
7. Remove from heat and stir in cheese.

7 ounces boxed elbow macaroni
2 ribs of minced celery
1 tablespoon dry minced onion
1/3 cup diced sweet pickles
1 1/2 cups miracle whip
1/2 cup mayonnaise
1/4 teaspoon black pepper
1/4 teaspoon dry mustard
1 teaspoon Sugar
Pinch of salt (or to taste)

Cook macaroni according to instructions on box and
cool.

Combine everything just as listed.

Refrigerate salad in a tightly covered container for
several hours before serving.

Custard Filled Cornbread

- 2 eggs 
- 3 tablespoons butter, melted and cooled 
- 4 tablespoons granulated sugar 
- 1/2 teaspoon salt 
- 2 cups milk 
- 1 1/2 tablespoons white vinegar 
- 1 cup all-purpose flour 
- 3/4 cup yellow cornmeal 
- 1 teaspoon baking powder 
- 1/2 teaspoon baking soda 
- 1 cup heavy cream 

Preheat oven to 350F. Butter an 8-inch square baking
dish or pan that is at least 2 inches deep. Put the
buttered pan in the oven and let it get hot while you
mix the batter. 

Put the eggs in a mixing bowl and add the cooled
melted butter. Beat until the mixture is well blended.
Add the sugar, salt, milk, and vinegar and beat well. 

Sift into a bowl or stir together in a bowl the flour,
cornmeal, baking powder, and baking soda and add to
the egg mixture. Mix just until the batter is smooth
and no lumps appear. 

Pour the batter into the heated pan, then pour the
cream into the center of the batter - do not stir!

1 cube margarine
2 cups rice -- uncooked
5 cups water
1 package dry onion soup mix
1 package slivered almonds

Melt margarine, add rice and saute 10 minutes. Add
water and onion soup mix and simmer for 25 minutes or
until rice is tender. Add almonds.

Almond Crunch Bars

l stick oleo
l cup almonds
l/2 c. sugar
l T. light corn syrup

Use a round cake pan and line with foil. Butter foil
generously. Take ingredients and heat in l0-inch
skillet and stir constantly until mixture turns golden
brown - about 5 - 6 minutes.

Pour and spread in pan. Let cool l5 min. and lift off
and break into
pieces. Enjoy!! It's that simple!
