Famous Recipes - Chicken Schnitzel

CHICKEN SCHNITZEL

INGREDIENTS 
2 Large Chicken Breasts 
1 Cup Plain Flour seasoned with Salt and Pepper 
1 Egg, whisked with 1 Tablespoon Water 
2 Cups Dry Bread Crumbs 
500 ml [ 17 1/2 fl oz ] Vegetable Oil 

DIRECTIONS 
1. Place Chicken Breast on chopping board and with a sharp knife, slice evenly through to create 2 or
depending on thickness,        even 3 thin escalope's of chicken. 
    Flatten out to even width with a meat mallet. 

2. Lay out three large plates ready to Coat the Chicken - 
    One with Seasoned Flour, Another with Egg Mix, Another with Bread Crumbs.

3. Using one hand, lightly Coat the Chicken with flour, shake off excess, dip each side into egg, then coat
with bread crumbs. 

4. Heat a deep frying pan with the oil and one or two at a time, cook the chicken schnitzel, turning over once
the underside turns      golden brown. 

5. Prepare a draining bowl - a deep sided bowl filled with crumpled absorbent kitchen paper and stand the
cooked schnitzel             upright so more of the oil is able to drain away.

6. Serve with potatoes- mashed, boiled or fried.

Famous Recipes - Valentine Braided Heart

Valentine Braided Heart

2 loaves Rhodes Bread, thawed and risen
3 ounces package cream cheese
1-tablespoon butter, softened
1 teaspoon lemon juice
1/4 cup sugar
1 21-oz can cherry pie filling
1 egg, beaten

Icing:
1 cup powdered sugar
1 tablespoon butter, softened
2 tablespoons milk
1/2 teaspoon vanilla or almond extract
cherries, if desired

Spray board or counter with non-stick cooking spray.
Place loaves end to end and roll the combined length
into a 12x30-inch rectangle. With a clean ruler,
gently mark a 4-inch space down the center. Then mark
dough on either side of center into 1-1/2 inch strips
horizontally. Mix cream cheese, butter, lemon juice
and sugar together and spread down the center of
braid. Top mixture with cherry pie filling.

Make cuts on sides from filling to dough edges. Begin
braid by folding top row toward filling. Then fold
strips left over right, right over left. Fold bottom
end towards filling and finish by stretching last

1 qt vanilla ice cream, softened
1/2 c marsala wine (or to taste)

Mix the wine into the softened ice cream (or add
towards the end of the mixing procedure of your own
ice cream recipe). Re-freeze.

Lemon Sherbet Punch

Liberty Tree Tavern, Magic Kingdom

4 cups  Lemon sherbet
1 cup  Frozen lemonade concentrate, thawed
3 cups Warm water
Ice cubes
Lemon slices

Place sherbet in mixing bowl. Using mixer on low, add
lemonade concentrate and water. Mix well, 5 mins.
Refrigerate. Serve in tall glasses with ice and
garnish with lemon slices.

Cracker Barrel Old Country Store Baby Carrots
(copycat)

2 lbs. Fresh Baby Carrots
1 tsp. Salt
1 Tbsp. Sugar
2 Tbsp. Margarine

Rinse carrots and place in a two quart sauce pan. Pour
enough water in sauce pan to just cover the top of the
carrots. Cover carrots with a lid place on medium heat
and bring to a boil. Turn heat to low and simmer for
30 - 45 minutes until the carrots are tender when
pricked with a fork.

When carrots start to become tender pour half of the
water off carrots and add salt, sugar and margarine.
Place lid on pan and cook until completely tender but
not mushy. More salt may be added if needed.

Serve carrots along side your favorite entree. The
kids will enjoy the little baby carrots. For some
additional flair you might want to substitute brown
sugar, and a dash of nutmeg will do wonders.

Famous Recipes - Shreded beef sandwiches


RECIPE: SHREDDED BEEF SANDWICHES

 
INGREDIENTS:
1 (2 1/2 to 3 1/2 lbs.) lean chuck roast
1 large onion, quartered and thinly sliced
1 envelope onion soup mix
2 or 3 cloves garlic, thinly sliced
1 (10 1/2 oz.) can of tomato soup
1/4 cup brown sugar
2 tbsp. Worcestershire sauce
1 tbsp. lemon juice
1 tbsp. dijon mustard
1/4 teaspoon hot ground pepper mix
1/2 teaspoon celery seed
salt to taste

DIRECTIONS:
Trim fat from beef and cut into 4 or 5 large chunks to fit
in crockpot. Combine remaining ingredients and pour over beef.
Cook in a crock pot for 8 to 10 (4 to 5 on high) hours on low.
Pour juice into a small saucepan and simmer on the stovetop
for 15 to 20 minutes to reduce and thicken. In the meantime
shred beef with 2 forks or potato masher. Return thickened
sauce to the beef in the crockpot. Keep warm and serve with
buns and coleslaw.

Yield: 6-8 Servings

Famous Recipes - Sweet Potato Salad


Sweet Potato Salad

2 pounds of sweet potatoes
1-1/2 cups mayonnaise
2 teaspoons Dijon mustard
1/4 teaspoon salt
4 hard-cooked eggs, chopped
1-1/2 finely chopped celery stalks
8 green onions, sliced

Place sweet potatoes in a large saucepan and cover
with water. Cover and boil gently until the potatoes
can easily be pierced with the tip of a sharp knife,
about 30-45 minutes. Drain. When potatoes are cool,
peel and dice. In a large bowl, combine mayonnaise,
mustard and salt. Stir in eggs, celery and onions. Add
potatoes, stir gently to mix. Cover and refrigerate
for 2-4 hours. Yield: 8-10 servings.

Use equal amount of ingredients per person.
Example 1 potato per person, or 2 potato for two persons etc

RAKOOT KRUMPLI

A Hungarian Dish

INGREDIENTS 
Potatoes, boiled until tender and then peeled and sliced 
Eggs, Hard Boiled 
Hungarian Csabai, thickly sliced { Hungarian sausage ]
Red Onion, diced 
Sour Cream 
Fresh Bread Crumbs 
Mild Hungarian Paprika 

DIRECTIONS 
1. Lightly Brush ceramic baking dish with Oil. 

2. Sauté Onion until soft and ADD Sour Cream, stirring. 

3. Layer Potato then Egg then Csabai, Seasoning in between. 

4. Pour over Sour Cream Mixture. 

5. Repeat layers, finishing with a layer of Potato. 

6. Sprinkle over Bread Crumbs and Paprika and bake for 35 to 40 minutes until golden.

Famous Recipes - Crumb Cookies II

Crumb Cookies II
Serving Size  : 36

1 cup  all-purpose flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon ground cinnamon
1/4 teaspoon ground cloves
2/3 cup vegetable shortening
1 cup packed light brown sugar
2 large eggs
1/2 cup molasses
2 1/2 cups bread crumbs
milk -- for glazing

Combine the flour, baking powder, baking soda, and
spices.

In a large bowl, cream the vegetable shortening and
brown sugar. Beat in the eggs one at a time.  Beat in
the molasses. Gradually blend in the dry ingredients.
Fold in the bread crumbs. Cover and chill for 4 hours.

Preheat the oven to 350F.  Lightly grease 2 baking
sheets.

On a floured surface, roll out the dough to a
thickness of 1/4 inch. Using a 2-inch round cookie
cutter, cut into rounds and place 1 1/2 inches apart
