Pecan Spice Cake with Caramel Frosting

2 cups all purpose flour
1 tsp. baking soda
1 tsp. salt
1 tsp. cinnamon
1/2 tsp. ground allspice
1-1/2 sticks (6 oz.) butter, softened
1 cup sugar
3 large eggs, separated
1/2 cup buttermilk
1 cup strawberry jam
Caramel Frosting, recipe follows
1/2 cup finely chopped pecans, plus 1/2 cup pecan
halves for garnish

Preheat the oven to 350? F. Butter and lightly flour
two 8" round cake pans. In a medium bowl, whisk the
flour, baking soda, salt, cinnamon and allspice.

In a large bowl, using an electric mixer, beat the
butter until creamy. Add the sugar and beat until
fluffy. Add the egg yolks and beat until blended, then
beat in the buttermilk. At low speed, beat in the dry
ingredients. Beat in the jam and the chopped pecans
until combined.

In a clean stainless steel bowl, using clean beaters,
beat the egg whites at medium speed until frothy.

1-1/2 cups flour
1/2 cup sugar
2 teaspoons baking powder
1/2 teaspoon salt
1/2 small bottle maraschino cherries cut up
2 eggs
3 tablespoons melted butter
1 cup cherry juice and milk combined

Preheat oven to 375.
Prepare muffin tins.
Stir together dry ingredients then add cherries.
Mix eggs, cherry liquid and melted butter together
then combine with 
the dry ingredients incorporating until just combined.
Bake for 20 minutes.

2 cup flour
1 cup whole wheat flour
3/4 tsp salt
2 1/4 tsp baking powder
3/16 tsp baking soda
1/4 cup brown sugar
3/4 cup sugar
1 1/2 cup ricotta cheese
1 1/2 cup buttermilk
3 eggs
1 1/2 Tbs lemon juice
1 Tbs vanilla
1 Tbs almond extract
4 Tbs butter -- melted; or canola oil
2 1/4 cup cherries -- not defrosted if frozen; pitted
and sliced; or 
1 cup dried cherries

Heat oven to 350.
Spray 12 muffin cups.
Combine flour through sugar.
Beat buttermilk into ricotta in separate bowl, add
eggs, whisking in 
one at a time.
Beat in lemon juice, vanilla and almond extracts.
Pour with butter and cherries into flour, fold in just
until 
moistened.

BEEF SHANKS W/ROOT VEGGIES

6 med carrots, cut in half crosswise, then cut in
quarters lengthwise
2 med onions, cut in eighths
2 med turnips, peeled and cut into 1/2" sticks
1 med rutabaga (8-10 oz) peeled and cut in 1/2" sticks
3 med thin skinned potatoes, cut lengthwise into 6ths
1 bay leaf
1/2 tsp EACH dry thyme and coarse ground pepper
4 meaty slices beef shank, 1" thick (2 to
2 1/2 lb total)
2-3 TBS flour
1 cup beef broth
2 TBS cornstarch blended with 2 TBS water
salt to taste

In 5 qt or largers slow cooker, combine carrots,
onions, turnips, rutabaga, potatoes, bay leaf, pepper
and thyme.

Coat beef shanks with flour, place on top of veggies
in a single layer. Pour in broth.

Cover and cook at low setting til beef is so tender it
pulls away from bones (9-10 hrs).  Carefully lift beef
and veggies to warm deep platter and keep warm.

Skim and discard fat from cooking liquid, then blend
in cornstarch mixture.

Crockpot Vegetarian Hoppin John

1 lb dried black eye peas
2 qts plus 3 cups water
1 med onion, chopped
3 cloves garlic, minced
1 lrg can (7 oz) diced green chiles
2 tsp ground cumin
1/4 tsp pepper
1/4 tsp baking soda
1 dried or canned chipotle chile
1/2 cup brown rice
3 lrg tomatoes, peeled and chopped
salt to taste

Rinse and sort thru peas. In a deep pot, bring 2 qt of
the water to boil over high heat. Add peas.

Let water return to boil; then boil uncovered for 2
min. Remove pan from heat, cover and let stand for 1
hr.

Drain and rinse peas, discarding cooking water.

In crockpot, combine onion, garlic, green chiles,
cumin pepper, baking soda and chipotle chile. Stir in
peas; pout in remaining 3 cups water.

Cover and cook at low setting til peas are tender to

Cheeseburger Salad

Ingredients 
1  pound ground beef 
1/2  of a 2-ounce box (1 envelope) onion soup mix (1/4 cup) 
3/4  cup water 
6  cups shredded leaf or iceberg lettuce 
1  cup cherry tomatoes, halved or quartered 
1  medium green, red, or yellow sweet pepper, cut into bite-size strips 
1/2  small red onion, thinly sliced and separated into rings 
1-1/2  cups shredded sharp cheddar, Swiss, American, or colby cheese (6 
ounces) 
   French Pickle Dressing (see recipe below) 
   Crumbled crisp-cooked bacon (optional) 

Directions 
1. In a large skillet, cook ground beef until brown. Drain off fat. 
Sprinkle dry onion soup mix over meat; stir in water. Bring to boiling; 
reduce heat to medium and cook, uncovered, about 4 minutes or until no 
water remains.

2. Meanwhile, in a very large bowl, combine lettuce, tomatoes, sweet 
pepper, and red onion. To serve, divide lettuce mixture among 6 salad 
plates. Top each serving with some of the warm meat mixture. Sprinkle 
with cheese. Serve with French Pickle Dressing. Sprinkle with 
crisp-cooked bacon, if you like. Makes 6 main-dish servings.

Ingredients 
4-1/2  to 5 cups all-purpose flour 
2  packages active dry yeast 
1-1/2  teaspoons baking powder 
2/3  cup sugar 
1/2  cup shortening 
1/4  cup nonfat dry milk powder 
1-1/2  teaspoons salt 
3   eggs 
1  teaspoon vanilla 
2  cups chopped, fresh cranberries 
   Shortening or cooking oil for deep-fat frying 
   Doughnut Glaze (see recipe below) 

Directions 
1. In a mixer bowl, combine 1-1/2 cups of the flour, the yeast, and the 
baking powder. In a saucepan, heat the sugar, 1/2 cup shortening, dry 
milk powder, salt, and 2/3 cup water just until warm (120 degree F to 
130 degree F) and shortening is almost melted, stirring constantly.  

2. Add to flour mixture; add eggs and vanilla. Beat with an electric 
mixer on low speed for 30 seconds, scraping sides of bowl constantly. 
Beat on high speed for 3 minutes. Using a spoon, stir in cranberries and 
as much of the remaining flour as you can.  

3. Turn out onto a lightly floured surface. Knead in enough of the

Green Beans, Water Chestnuts and Almonds 

For the holidays, Thanksgiving and Christmas - either
one or both. Water chestnuts gives lovely crunch. 

1 1/2 lb green beans, stemmed 
1/2 cup  onion, sliced & quartered 
1 tablespoon olive oil 
1/4 cup water chestnuts, slivered 
1/4 cup almonds, slivered & toasted 

Cut green beans into 3" long pieces.  Making a
diagonal cut is very elegant.  Steam until tender,
about 10 minutes. Do not overcook or they lose their
brilliant green.  Remove from heat & set aside.  

Heat oil in a large pot & saute the onions until soft,
5 minutes. Stir in reserved beans and water chestnuts.

Transfer immediately to a serving dish, sprinkle with
almonds & serve.

1-1/2   to 2-pound boneless beef chuck eye roast 
1-1/2  to 2-pound  boneless pork top loin roast 
1  tablespoon cooking oil 
2-1/2   pounds potatoes, peeled (or partially peeled) 
1-1/2  pounds carrots, halved crosswise or 1-1/2 pounds baby carrots 
2  to 3  onions 
1/2  teaspoon salt 
1/2  teaspoon pepper 
1-1/2  cups water 
1/4  cup all-purpose flour 
1/2  cup cold water 
   Salt and pepper 

 
Directions 
1. In an 8-quart Dutch oven, brown meat, one piece at a time on all 
sides, in the hot oil. Drain off the fat. Return both pieces of the meat 
to the Dutch oven.  

2. Arrange potatoes, carrots, and onions over meat. Sprinkle with 1/2 
teaspoon salt and 1/2 teaspoon pepper. Pour in 1-1/2 cups water.  

3. Cover and roast in a 350 degree F oven 2 hours or until meat and

Puerto Rican Baked Eggs Vinaigrette (Huevos a la Vinagreta) 

2 large tomatoes 
2 large onions 
8 eggs 
1/4 cup (60 ml) olive oil 
2 Tbs (30 ml) red wine vinegar 
1 tsp (5 ml) Dijon mustard 
Salt and freshly ground pepper to taste 
Chopped fresh chives for garnish (optional) 

Slice the tomatoes so as to obtain 8 thick slices, discarding the ends. Place the tomato slices in the bottom
of a lightly greased glass baking dish. Slice the onions so as to obtain 8 thick slices, and remove the
centers so that 8 large onion rings remain. Place these around the tomato slices. Carefully break an egg
into each of the onion rings. Whisk together the olive oil, vinegar, mustard, salt, and pepper and pour
this mixture over the eggs. Bake in a preheated 325F (160C) oven for 25 to 30 minutes, or until the eggs are
set to your taste. Garnish with chopped chives if desired. Serves 4.
