You Won't Know It's Not Potato Salad

4 eggs
2 bags (1 lb each) frozen cauliflower florets
1 bag (10 oz) Cascadian Farm organic frozen peas &
carrots
1 3/4 cups reduced-fat mayonnaise or salad dressing
1 teaspoon granulated sugar
1 teaspoon salt
1/4 teaspoon pepper
1/4 teaspoon paprika
1 tablespoon cider vinegar
1 teaspoon yellow mustard
1 cup chopped celery (2 1/2 stalks)
2/3 cup chopped onion (about 1 medium)

In 2-quart saucepan, place eggs in single layer; add
enough cold water to cover eggs by 1 inch. Cover; heat
to boiling. Remove from heat; let stand covered 15
minutes. Drain eggs. Immediately run cold water over
eggs until completely cooled. Peel and chop eggs.

Meanwhile, in large (4-quart) microwavable bowl, place
frozen cauliflower and frozen peas and carrots; cover
with microwavable waxed paper. Microwave on High 20 to
25 minutes, stirring once halfway through microwaving.
Drain vegetables in colander; rinse with cold water to
cool. Place colander over same large bowl; refrigerate
at least 30 minutes or until cooled.

German Chocolate Cake

2 1/4 cups all-purpose flour 
1 1/2 cups granulated sugar 
1 1/2 teaspoons baking soda 
1/4 teaspoon salt 
1 cup butter, softened 
1 cup sour cream 
4 large eggs 
4 ounces sweet baking chocolate, melted 
1/2 cup milk 
3/4 teaspoon vanilla extract 

Topping 
3/4 cup evaporated milk 
1/2 cup light brown sugar, firmly packed 
1/2 cup butter 
1 can (3 1/2 ounces) flaked coconut, or about 1 1/3
cups 
1 cup chopped pecans 

Grease and flour two 8-inch square baking pans.
In a large bowl, combine flour, sugar, baking soda,
salt, butter, sour cream, eggs, chocolate, milk, and
vanilla. Beat with mixer at low speed until blended.
Increase mixer to high and beat 2 minutes longer.
Spoon batter into prepared pans. Bake in a preheated
350° oven for about 35 minutes, or until a wooden pick
or cake tester inserted in center comes out clean.

You can roll these burritos yourself, or you can simply lay the ingredients out and let the diners make their
own. 

Egg and Black Bean Burritos 

6 eggs 
2 Tbs (30 ml) water 
Salt and freshly ground pepper to taste 
1 Tbs (15 ml) butter 
4-6 large flour tortillas, warmed 
1 15-oz (425 g) can black beans, drained, rinsed, and warmed 
About 1 cup (250 ml) shredded cheddar cheese 
About 1/2 cup (125 ml) prepared tomato salsa 
About 1/2 cup (125 ml) sour cream 
1-2 scallions (spring onions), green and white parts, finely chopped 

Whisk together the eggs, water, salt, and pepper. Heat the butter in a skillet over moderate heat and cook
the egg mixture, stirring frequently, until light and fluffy. Spoon the eggs onto the tortillas and top
with the remaining ingredients. Fold in the sides of the tortillas and roll up burrito-style. Serves 4 to 6.

Light Slaw

Ingredients
 1 bag (16 ounces) shredded cabbage mix for coleslaw
 2 medium carrots, shredded
 1 green onion, chopped
 1/4 cup seasoned rice vinegar
 1/4 teaspoon salt
 1/4 teaspoon coarsely ground black pepper

Directions
In large bowl, combine cabbage mix with remaining ingredients, tossing 
to mix well. If not serving slaw right away, cover and refrigerate up to 
6 hours. Toss well before serving. Cooking Information

Sue Bee Honey Grilled Shrimp

Ingredients:
1/2 cup Sue Bee Honey
1 1/2 pounds shrimp, peeled and deveined
1 cup lime juice
1 teaspoon white pepper

Directions:
Thread shrimp evenly on wooden skewers. 
Combine Sue Bee Honey, lime juice and pepper, 
then brush the mixture on both sides of the shrimp. 
Place shrimp on grill, 4 to 6 inches above coals that 
have lost their flame, have a red glow and a thin 
layer of white ash. Baste occasionally with honey
mixture. Grill 2 to 3 minutes on each side until 
shrimp are opaque. Serves 4.

Famous Recipes - Lemon Sunshine Salad


Lemon Sunshine Salad

 Ingredients
1/2  cup acini de peppe (tiny, bead-shaped pasta) 
1  4-serving-size package instant lemon pudding mix 
1  29-ounce can peach slices in light syrup 
2  11-ounce cans Mandarin orange sections, drained 
1  8-ounce container frozen whipped dessert topping, thawed 

Directions
1. Cook pasta according to package directions. Drain. Stir in pudding 
mix. 

2. Drain the peaches, reserving 1/2 cup syrup; stir reserved syrup into 
pasta mixture. Cut peach slices into bite-size pieces. Fold the peaches 
and Mandarin oranges into pasta mixture. Cover; chill about 2 hours. 

3. Just before serving, fold in the whipped dessert topping. Serves 15. 

Lemon-Pineapple Salad: Follow recipe as directed, except substitute one 
20-ounce can of either juice-pack crushed pineapple, pineapple tidbits, 
or chunks for the peaches and use 1/2 cup of pineapple juice for the 
peach syrup.

Beef and Vegetable Kabobs

Ingredients:
1 pound top round steak; cut into 1 inch chunks
1 medium sweet onion, quartered
3 tablespoons soy sauce
1 tablespoon orange juice
1 tablespoon olive oil
1 tablespoon chili sauce
1/4 tsp. ground ginger
1 medium zucchini or yellow squash
1 medium red pepper
1 medium green pepper
1/2 lb. medium mushrooms
1/2 lb. cherry tomatoes

In a medium sized bowl, mix the first 7 ingredients.
Cover mixture and refrigerate at least 2 hours, stirring
occasionally. Prepare the grill, or preheat gas grill. Cut
zucchini and yellow squash into 1 inch chunks. Cut the
pepper into 1 inch pieces. On long skewers, alternately
thread zucchini, yellow squash, peppers, tomatoes and
mushrooms, beef and onions.  Reserve the marinade.

Place kabobs on grill over medium heat. Cook about 10
minutes, brushing with the reserved marinade. Turn the
skewers several times while brushing frequently with
the baste.

Easy Butter Bars 

 Ingredients
  Nonstick cooking spray 
1  package 2-layer-size yellow or white cake mix 
1/2  cup butter, softened 
1  egg 
1  8-ounce package cream cheese, softened 
2  eggs 
1/2  to 1 teaspoon butter flavoring (optional) 
4  cups sifted powdered sugar 
  Sugared cranberries (optional) 
  Fresh mint sprigs (optional) 

Directions
1. Coat a 15x10x1-inch baking pan with some cooking spray. 

2. For the crust: In a medium mixing bowl, beat the cake mix, softened 
butter, and 1 egg with an electric mixer on low speed until mixture is 
crumbly. Pat into the bottom of the pan; set aside. 

3. In a medium mixing bowl, combine cream cheese, the 2 eggs, and butter 
flavoring, if you like, and beat until smooth. Add the powdered sugar 
and beat on low speed until well combined. Spread on top of crust in 
pan. 

4. Bake the bars in a 350 degree F oven for 25 to 30 minutes or until 
the filling is set and golden brown. Cool in pan on a wire rack. (The 
filling will fall when it&#65533;s cooled.) Cut into the bars. Garnish
