Greek Goat Cheese Fennel Pollen Potatoes - Serves 6 Ingredients 4 russet potatoes 1 tablespoons olive oil 1 leek -- white part only, diced, washed 1 1/2 cup heavy cream 6 ounces goat cheese 1 teaspoons fennel pollen Instructions Simmer potatoes in salted water until done, but not too soft. Cool, peel, and dice into rough 1/4" cubes. Meanwhile heat olive oil in saute pan over medium high heat. Saute leeks in the oil until translucent. Add cream and bring to a simmer. Crumble in goat cheese. Whisk and heat until goat cheese is melted. Whisk in fennel pollen and season with salt and black pepper. Remove from heat and fold in diced potatos. Divide into single serving baking dishes (such as souffle or creme brulee or ramekin dish) Top with walnut crumbs (see below) and bake at 350 degrees until bubbly around edges and thickened.
