You are right. In svn3080 a change has been implemented to change behaviour of the sliders, but it doesn't work correctly, at least not on OSX. I undid the change and recompiled hugin (not published, only on my own machine) and now it works again.
I will file a bug report.
I think I will release a new bundle early next week as the wxMac (wxwidgets) developers made some changes that will be of great benefit for Mac users (but also for linux and windows).
In that bundle I will also incorporate this hfov/vfov slider patch, be it my own "patch" or one from the development team. I don't know what my simple undoing of the previous change will do to other platforms so the developers might need to do further testing on other platforms.
Note: The changes of the wxMac developers require a development version of wxMac (wxwidgets). I don't know what that means to other platforms, but I will work on it.

This last build seems to solve a problem I had seen in previous ones:
the "Assistant" tab now works fine with 16-bit tifs (the normal chain
did so in previous builds.)
On the contrary the sliders in the "Panorama Preview" window do not
work (no effect). They did work before.
